For lunch each day, I eat black beans, long grain brown rice, & salsa mixed. I LOVE it and it is healthy!

i always bake my Rice with a shot of Low Sodium Chicken Stock and a shot worth of Tomato Juice, Pepper.Chili Flakes Then near the end add Mushrooms, Red and Green pepper and a bit of onion. Neat the last 10 minutes so the veggies get cooked as well

I'm doing a 4 day detox which calls for 2 cups of brown rice for dinner and any type of bean. I actually boiled the rice in chicken stock, added garlic, cayenne, salt and pepper and poured my 1 cup of light red kidney beans over the rice and expected the worse. OMG...soo yummy. Your right, adding a few simple spices makes the difference.

That sounds awesome! And I totally agree with the comment about cilantro. It's my favorite herb and I just started a mini garden in my kitchen with nothing but cilantro so I can make salsas this summer.

    Thanks for the recipe!!!!
