HIGH protein, low calorie Turkey Meatballs! Simple and Fast!

If you want a high protein snack, this is one of my favorite go-to's! I keep them in the fridge and grab them when I'm hungry instead of a carb loaded box of crackers 
Turkey Meatballs!
Ingredients:
1 pound lean ground turkey breast
1 egg
½ cup finely grated carrot or sweet potato
2 tablespoons oatmeal or breadcrumbs
2 tablespoons parsley
½ teaspoon salt
½ teaspoon pepper
1 clove garlic, minced
2 tablespoons grated Parmesan (optional)
Instructions:
Set oven to 350ºF and line a large baking tray with aluminum foil or lightly spray with oil. They will stick otherwise.
Combine all ingredients in a bowl until well mixed.
Portion by tablespoons onto the tray. You will get about 24 balls.
Bake 15-25 minutes, until browning on top!

Shouldn't be too hard to figure out. The spices are nothing in calories, so add up your turkey, egg, cheese and potatoes, then divide by 24 for calories. Personally, aside from protein, I don't think there's much in macros to be concerned about. I'd probably use italian breadcrumbs for this.0

WOW these are delicious! First batch just out of the oven. I used the oatmeal option (instant) And used the Kraft parmesan Romano I had on hand. I thought they might be sweet with the carrots but they are not. They are perfect! I'm using them over garlic mashed cauliflower. I got 60 meatballs from my 3lb ground turkey.
Also taking the already on oven option to roast some garlic (my first time). I plan to use some of that in some homemade hummus later.

I make something similar to this (its the Jamie Eason's Ground Turkey/Chicken Meat Muffins and they're absolutely delicious! They will be a go to for me to make every weekend going forward. I have 1 as a snack and 2 as a meal, perfect!0

Thank you for the calorie update, I suspected it was higher. Also your fat content will vary based on which turkey you buy, (lean, extra lean etc) Incidentally I used egg whites for one egg, since I only had 2 eggs. (my recipe was tripled). It came out fine and I suspect I could use all egg whites next time if I want to. One may also wish to adjust the salt in the recipe to compensate for the salt in the cheese. I just ate one that for me was a touch too salty, but still delicious! Use your judgement!

These are similar and taste great! I love them by themselves or I will mix in soup for more protein. They freeze well, but usually never make it that far. I have left out the oatmeal (just to reduce the carb count) and they are very good and hold their form.0 -

I use a similar recipe as a base for all kinds of meatballs!
finely minced Shitake/Portabella mushrooms
tomato paste
soy sauce/liquid aminos/coconut aminos/fish sauce
shredded zuchinni
shallots/onion/green onions
use a ground beef/pork/chicken or mixture in place of turkey
I always double the batch of whatever variation I make and freeze half!0 -

I made these yesterday. They were very good. I made two batches. Only substitute I would make next time...less salt. These will be my snack for the week. Came to 31 cals per for me.0

Oh my. I made these yesterday with the ingredients I had on hand - 1/2 an apple, carrot chunks (versus grated), some chicken seasoning, a bit of parsley, the ground turkey and a bit of salt and pepper. They were great! I liked that the carrot chunks were present. It was a really nice difference in texture. I worked out a recipe so that I had four small meatballs, some homemade stewed tomatoes and spaghetti for about 250 calories. It was a really tasty lunch. Thanks for the suggestion!0
