In need of recipes for high veggie protein please help

    This is a veggie and lentil recipe...hope it helps!

    Meatless Moussaka - slow cooker recipe

    Mix 2 cans of lentils (drained/rinsed) with 3 cups of pasta sauce and 1 tsp of cinnamon.
    1-2 eggplants cut up into slices

    Layer 1 cup of lentil mixture with a layer of sliced eggplants into the slow cooker. Alternate layers of lentil and eggplants until there isn't any more left.

    Cook on high for 4 hours or on low for 8 hours, mix and enjoy!

    This sounds fantastic! Is it doable in the oven? Have you ever frozen it beforehand?
