Hubby is skiing tonight, and I'm alone for dinner. What are you all preparing? I need ideas as dinner is boring me.....

    I always div to hairy dieters cook books when stuck for dinners. Try their spicy chorizo pork rice or tarragon chicken both are personal faves :0)

    Refried black beans with green chilies, hot salsa, green leafy lettuce, fresh tomatoes, lime juice and toasted tortillas. It's so good!

    Buffalo Chicken Pizza for us. Not hard to make and it tastes great, it can be easier too if you just buy a pre made crust. I put a couple tablespoons of ranch, toss some shredded chicken in buffalo wing sauce then put 8 ounces or so of mozzarella and into the oven for 15ish minutes.

    I am working from 5-11 so dinner for me is cold leftover pork tenderloin with mayo as dip and a small caesar salad.

    For the family, it is pork and broccoli stir fry over rice.

    I'm making pizza, on a wrap with a tomato sauce made from roasted tomatoes, roasted garlic, lots of herbs, and a bit of olive oil. Toppings... spinach, mushroom, feta, ham, and parmesan. Made one for tonight and a second to take for lunch tomorrow. Waiting for the oven to ding now :smile:

    I have some leftover roast chicken, so I'm thinking either chicken and black bean burritos, or sauteeing some greens and tomatoes in garlic and olive oil, then tossing that and the reheated chicken with some spaghetti squash and parmesan.
  • My dinner is sweet chilli tuna, mayo and tomato lettuce wraps. My lunch was 2 cornish pastries.
