Thai chicken noodle soup - under 500 calories

This is a really easy tasty recipe for 1, it comes in at around 470 calories and is full of lean protein and vitamins
Ingredients:
225ml chicken/vegetable stock
Small handful dried mushrooms
Tsp minced ginger
150ml coconut milk
1 chicken breast, thinly sliced
Splash fish sauce
Splash soy sauce
1 bok choi, sliced
1/2 teaspoon light brown sugar
1/2 small red chilli
Good squeeze lime
Handful bean sprouts
50g thick rice noodles
1 spring onion, cut into strips
Coriander
Method:
Prepare the stock in a saucepan. Add in the ginger and dried mushrooms (broken into small pieces) and simmer for 5 minutes.
Add the coconut milk and return to simmer. Transfer the sliced chicken and chilli into the broth, add the soy sauce, fish sauce and sugar and let it cook through on a low heat for approximately 3 minutes.
Add the lime juice, bean sprouts, bok choi, and rice noodles. Heat through for 1-2 minutes.
Add chopped coriander and little more chilli or soy sauce to taste.

I love Thai chicken soup. It's my favorite dish at the Thai restaurant. Never tried to make it myself... What kind of coconut milk do you use? I know there are different kinds and some are extremely fatty.0

I usually just use whatever's cheapest at the supermarket, but you could use reduced-fat coconut milk if you wanted to lower the fat content, I don't think it would affect the taste much.0

I made this soup yesterday. I was forced to do a couple of minor changes because I didn't have/get all the products. It was heaven!! I've been craving a soup like this for a while but I rarely let myself get one because they seem to be loaded with sodium and calories. This one tasted fresh, light and divine and it was so quick, too. Highly recommended to all Tom Kha Gai fans Thanks Kathryn!0
