I dice the baked chicken, and stir it into Indian simmer sauces (dopiaza, tikka masala, rogan josh, korma, etc.) (without the rice).

In a slow cooker chop 1 lrg onion, 1 jalapeno, 1 can of zesty jalapeno diced tomatoes, 1 can of mild chilies diced tomatoes, 1 can of tomato sauce, 2 red peppers, 4 to 6 chicken breasts, some crushed red pepper and slow cook on low about 8 hrs. Around the last 20 min add 1 cup of quinoa or rice.
