    I love all kinds of cheese, even cottage cheese. If I had to choose, it would be good aged Swiss.

    I spoiled, living in Wisconsin. There are so many craft cheese makers. I like a extra sharp aged cheddar, or a nice smoked gouda, and occasionally an aged brick. This is my favorite, with liver sausage and onions on rye (hence, the occasionally, and all by myself, it's stinky, lol).

    I am with you. Thought I was the only one who LOVES aged swiss. (the older the better). I actually get cravings so bad for a good aged swiss too. I also love one called Thunder Jack Cheese (it is an aged cheddar with harbenaro peppers in it. YUM, I can only find this in an amish town in Indiana. I also just tried an aged white cheddar with cranberries and oh my, It just melted in my mouth. I had to have seconds on that one. Yummy. I also am one of those that loves all cheeses, but the above are my favorites.

    I like every cheese except Gorgonzola (ewe). But lately, I have discovere fat free cheddars, which have more protein than regular chees. However, you can't cook with them

    I love all cheese, from fancy $25/ounce kinds I can't pronounce to pasteurized processed cheese food. This thread has introduced me to a couple kinds I haven't seen or heard of. Don't worry strange foreign cheeses, I'm coming for you.

    Brie that's smooth and creamy like buttah (and not ammoniated).
    + basically anything that's not Livarot.

    The one I eat most often is probably feta.

    Nokkelost is my absolute favorite. You couldn't get it in the US for a while, but I think it's back. Can't find it here, though. Havarti with caraway is an acceptable substitution.

    Also sharp cheddar and feta.
