Love a veg!

I am having a love affair w green beans right now. A humble, earthy veg that - when cooked well- elevates my spirit and reminds me that we are both from nature. I boil an inch of water in a pot then toss in the beans (stems removed) give it just a few minutes (3? 5? Depending on the amount) and then enjoy naked or with a smidge of butter and sea salt. I have even thrown a handful in my morning smoothie/chewy and revelled in all that nutrition in the simple bean. How about you?

    I'm head over heals in love with kale! I love it sautéed, mixed with scrambled eggs, juiced, in my smoothies, as a salad (I learned the trick is messaging it first). I seriously can't get enough of it!!!

    Add some sauteed mushrooms and garlic to those green beans, amazing. And roasted brocolli with olive oil, garlic, a sprinkling of nutmeg, and some fresh grated parmesan, so perfect
  • Thanks gals! I have not thought of roasting broccoli - suppose it never lasts long enough! Roasted cauliflower everything in season.

    By the way my chiro told me about using the kale leaves and massaging them - but he THREW THE STEMS AWAY! Horrors! they make the best soup.

    What else do you love on its own - especially if it can be carried for a snack? currently I am toting sugar snap peas but they have to be really fresh!

    Green beans have always been my favorite, and I'm going to be growing a lot more of them this summer. Roasted broccoli and cauliflower are great, too, but wow -- I've developed a real love of roasted (just w/salt and pepper) butternut squash, which makes a really nice, filling, high fiber snack.

    Yes, to roasted broccoli!! That's been my craving for the past few weeks. Cauliflower, carrots, cabbage and broccoli are my favorites roasted.

    I love vegetables. I can't think of a single vegetable I don't like at all. I prefer most cooked to raw, but I love red pepper, carrots, celery and jicama dipped in hummus, pb or spinach dip.

    Our family is addicted to radishes right now, of all things. I make a little salad by first slicing them super thin on the mandolin. Then I salt them and let them sweat for about 15-20 minutes. Finally, I toss them with rice vinegar and a little bit of toasted sesame oil. It has the most amazing Asian flavor. We seriously cannot get enough of this super-healthy salad. We are eating it every single day. You should see the clerk's face at the grocery store when I buy seven bags of radishes every week!

    Roasted broccoli tossed in some red pepper hummus and lemon juice might be my favorite thing ever.

    Have you tried roasting them? They are absolutely wonderful. I cut them in half, toss in EVOO & salt. Put them cut side down on a baking sheet and roast for about 12 to 15 minutes (like you would a brussel sprout, which are also yummy). The cut side gets all carmalized, they are the perfect side dish to any meat.

  • Today I was back with a green shake after 5 days with a GI bug and the BRAT dies (bananas, rice, apple, tea) and it tasted LIKE SPRING! cup of baby spinach, handful of parsley, 2/3 c frozen blueberries, 7 macadamia nuts, cinnamon, ginger root and unsweetened almond milk. My body feels like its healing from within! Have a great day everyone.
