Spaghetti squash and meat sauce, very low cal

Half a spaghetti squash
2 tomatoes
4oz 94% beef or turkey
1 pepper
1/2 onion
1 carrot (grated)
1 tbsp Italian seasoning

Cut the squash in 2, remove the seeds, and bake 40 minutes at 450 degrees (or until cooked). Meanwhile, chop all the veggies and grate the carrot. Cook the meat, onions and peppers until the meat is brown. Add spices, tomatoes, grated carrot, seasoning, salt to taste, and let simmer until the squash is cooked.

It makes two servings, or one if you're like me and like volume. You can add cheese, of course (I used a 6 cheese Italian blend).

Calories will depend on the size of your veggies, of course, but for me (using 96% lean beef) the whole thing came out to 332 calories, 41g carb, 6g fat, 30g protein for a HUGE portion (without counting the cheese).

    I love spaghetti squash. I top it with olive oil, Salt, Pepper, and sometimes either shredded parmesian or fetta.

    I also use spaghetti squash as a substitute for rice for my wife's peanut butter chicken it so good I prefer it to the rice.

    You can also cook spaghetti squash in the microwave pretty easily and save a lot of time if you are in a hurry. Just put the two halves upside down in a baking dish. Microwave for 12 - 15 minutes.
