Quinoa Taco Salad:
1/3 c cooked quinoa
2 Tbs. cooked corn
2 Tbs. canned black beans
2 Tbs. Monterey or Pepper Jack Cheese
Your Choice of Taco Spices
Handful of Lettuce
A bit of sour cream & salsa if you wish.
(Optional) a few slices of avocado
Combine all ingredients & enjoy on a taco wrap or w/ tortilla chips.0 -

One family member is trying quinoa. Breakfast is a bowl with half oatmeal/half quinoa..
I have also seen quinoa bread in the store. Makes pretty good toast.

I had never had quinoa before. Here is the recipe for Lemony Quinoa I tried last week. I loved it. I cooked the quinoa in the microwave and washed it first (apparently that takes away any bitterness)

I make a batch of quinoa in advance and freeze individual 1/4 cup portions for later use.
I like to throw mine in my fish cake recipe, instead of breadcrumbs or other binders. Breakfast idea is a great one. I love my Quinoa Kale salad. Or use it, instead of couscous or bulgar wheat, in Tabouleh.
And as a side dish, although quinoa can be bland, I cook it in some broth (your choice) with some herbs to add flavour (I recently served it with my Curried Chicken packets: http://community.myfitnesspal.com/en/discussion/10093497/looking-for-yummy-low-fat-recipes#latest).0 -

I tried it as a substitute for a quiche crust and it worked pretty well. I also love it in soups and as a substitute for rice.0
