Lentil recipes anyone?

So for the past month I've been on a huge lentil kick to increase me fiber and protein intake... Plus they're delicious and cheap! I've been checking out new recipes online but was curious if anyone has any suggestions for ones they like and could recommend. I like brown and French green... I tried red, but I think I keep over cooking them, they just turn to mush. But I'm willing to try all colors of the rainbow! I figured since I have this resource at my finger tips, why not give it a try?! Thanks everyone!

I have made lentil burritos. I cook up lentils with some seasoning. Saute some onions, throw them in. Cook them to the consistency you like - but there shouldn't be much water left. I like it with basmati rice, sour cream, salsa, cheese.0

Yes the red ones turn into mush, but it actually makes a great soup. Broth, celery, onions, garlic, lentils, salt, pepper and whatever spices you like (I like cumin, turmeric, curry and cayenne); once it's cooked you can puree with immersion blender. You can eat by itself, with pita, or with rice. One of my favorite foods!0

I like to add garam masala spice mix and diced sweet potato plus some diced sweet peppers and onion. Sometimes I'll add shredded pork and jade pearl rice and call it Moroccan stew.0

I love lentils!!! With red I make dal - I like it very simple so just some butter, some onion, some cilantro or curry leaf, green chilis, tumeric, garam masala, in the pressure cooker for 20 min.
With brown lentils I like to saute garlic, onion, some spanish chorizo (a really tiny amount will give great flavor), a little red pepper, tomato, paprika, salt and pepper. Serve with lemon juice.0 -
I like to cook up a bag of brown lentils with 2 cups chopped tomatod (Pomi or from a can) and 4 cups water for 25 minutes, then in a skillet heat up some garlic, add frozen corn and any other veggies u want (diced carrots and celery is delicous) and then add lentils and another cup of water, once the water is gone and they're pretty tender add sriracha salt and pepper. So good with mixed greens and an egg on top!0

Mujadra. 1 cup dry lentils, 1 cup dry bulgur or rice (I prefer bulgur) and about 2lbs of deeply caramelized onions. Serve with a dollop of yogurt. Amazing stuff.0

I just buy the lentil Dahl packs from woolworths or coles. Just add water, boil, simmer, eat.
Job done.
But reading some of these recipes I might have to try my hand at some lentil recipes0 -

I like to par cook lentils in bulk on the weekend and then finish them with my meals during the week. I par cook them to just barely edible and then finish them by heating them in a sautee pan with a little moisture (water or stock) and whatever seasoning goes with my protein and veg.0

I usually only make a half recipe and find its good for about 4-5 good sized servings. I found that lentils did great things for my mood when I was really suffering PMDD swings when I came off birth control. This soup is now on a monthly rotation.0 -

These are with three different types of dal or lentils, namely black matpe (black gram), toor dal (yellow pigeon peas), moong dal (green gram). There are practically TONS of other recipes out there should you find these boring or dull after a while. All it takes is a sense of adventure and some patience. You'll also benefit from having a pressure cooker for most of these recipes (an Indian kitchen staple actually).0 -

In our local version we also add a potato and a carrot to the simmering lentils, then blend this soup. Makes a very rich and satisfying soup. We serve that with extra virgin olive oil, lemon juice, green onions and radish - all on the side.0 -
I made this kedegree and it was amazingly easy and delicious. I also do a cup of lentils, a cup of rice, a can of golden mushroom soup and enough water to make 5 cups total in my rice cooker and it's a great comfort food.0

You can make hummus with cooked lentils. Search for Lentil Hummus on Google, there are lots of recipes.0

Indian or soup/stew works best for me. I like this thick so I can freeze leftovers in a ziploc and take them to work.
Take a couple cups of bulk brown lentils, rinse and soak an hour to overnight and rinse again before cooking.
Sautee some onion and garlic in a couple teaspoons of olive oil, add chopped tomatoes when onions start to soften a bit. Use one or two big onions. 2 or 3 tomatoes.
Then add lentils and throw in a bay leaf and water up to an inch above the lentils - you can add more or take out if it's too much. Heat to slight boil and turn down.
In 45 minutes or or so, throw in chopped spinach and remove from heat. When spinach is wilted. Lemon, salt and pepper to taste. Bulgur wheat thrown in with the tomatoes is good if you do grains.0 -
I make red lentil soup with smoked turkey. Super easy --
350 grams of diced carrots
250 grams of chopped onion
250 grams of chopped celery
350 grams of shredded smoked turkey
salt and pepper
Sweat these in a large pot with 2-3 TBSP EVOO until the onions are translucent.
Add 1 lb of red lentils and allow to cook for 2-3 minutes.
Add 10 cups of vegetable or chicken broth and a couple of bay leaves. If you like, you can add a little fresh thyme. Allow to simmer until the soup reaches whatever consistency you prefer (I like mine to get very soft.)
This freezes REALLY well. I'm getting ready to make a double batch to freeze.0 -

I love lentils too! I have tried every color. Love them. Cheap too! My favorite is sauté some onions and sliced up mushrooms (any kind) in coconut oil (use virgin cold pressed) add some curry powder, ground turmeric, organic vegetable broth. Throw into a slow cooker. There should be very little broth when you are done. You can add whatever other spices you like but I like the curry and turmeric flavor. You can serve this over rice, wheat bulgar or whatever "starchy" you want or just eat it plain. Sorry I don't have measurements in my head, I eyeball it but it's really very good.0

Cook them stove top by putting them in chicken broth, bring to a boil then simmer for 20 mins or so. Once cooked season with salt, pepper, cumin, coriander, clove, and cinnamon. Soo good!0
