I love meatballs - they're easy to cook, filling, & adaptable. Came across this list of ways to eat them and thought I'd share:

I often make 1-2 pounds of it (well, sometimes the same stuff gets turned into burgers, or meatloaf without the glaze - it's all the same, really). Then through the week I'll just add a meatball or two to whatever I'm making to make that thing more awesome. Or I'll just have them with plain rice and boiled asparagus or green beans, or just with black beans and veg, that's nice too.

Although I love the taste of meatballs, the really great thing is it's like 5 minutes of work that takes care of lunches and dinners for a few days. Great for lazy people :)

Throw together 1 onion, an egg, 1/2 piece of finely chopped bread or 1/2 cup breadcrumbs, 1-2 lbs of lean beef, and salt in the evening, let it sit in the fridge until the next day, roll that up into little balls and bake at 350 for 1 hour. Almost no work and so filling :)

I usually use beef, but I'm going to try a turkey and pork version again soon, just to switch it up (I eat a lot of beef).

Or for burgers - make them into patties, 2 cm thick, cook in 1-1.5 tablespoons oil at medium heat - 5 mins one side, 5 mins the other. No touching while they're cooking.

for meatloaf obviously just stick it into a loaf pan, same cooking time as for meatballs if you use a wide & shallow pan

Thanks for these ideas; I have some ground venison, and was thinking of meatballs but didn't want to put them on pasta... now there are heaps of options!

The chicken parmesan ones sound amazing! I'm having a Tupperware party on Saturday, I'm going to make those and serve them with toothpicks. Thanks!

Agreed! I'm excited that they reckon the Swedish meatball recipe is even better than Ikeas, too.

Me too :) This is the best endorsement I think I've ever heard (from the recipe site):

"I was raised by 14 (yes FOURTEEN) Swedish Au Pairs (no not at one time, before someone asks) and these are by far the most authentic tasting Swedish meatballs I have had in many many years. I followed the recipe exactly as Chungah wrote it (no substitutions, additions, omissions or witch craft) and it was OUTSTANDING. Nice job, Chungah!!"

    They must be good!
