It was suggested to start cooking more with Lentils as a way to help increase fiber, but I don't usually cook a lot with lentils.
Looking for some easy recipes that hopefully my picker hubby and son will like.

Pasta with Chard & Lentils

If you don't like slowcookers (and I don't) you can replace the 6-7 hours on low in a crockpot with about 40 minutes simmer on the stove.

I've not tried this specific recipe, but have made similar things in the past with chard instead of kale. There are also a number of soups that start with the combination of sausage, lentils and greens
Red Lentil Soup with Lemon

This red lentil soup is sometimes called Esau's Pottage or Shorbet Ads. You can add 1/2 cup broken spaghetti or mini shells and some extra water near the end of cooking for another traditional presentation.
Also many Indian Dal recipes are based around lentils and there are a number of lentil and grain salads

Mujadra. Many spellings and recipes, but a basic recipe is 1 cup lentils, 1 cup bulgur or rice (I prefer bulgur) and a couple of pounds of onions. Cook the lentils until not quite soft. While doing that, carmelize the onions. Add the lentils and uncooked bulgur to the onions, along with about a half cup of water. Simmer until the bulgur is cooked. Garnish with plain yogurt. It's a great and simple dish..0

Lentil Sloppy Joes--this is so good....I have to say though I tweeked it just a little, I also added ground turkey breast and some quinoa/brown rice leftovers

I made this dish yesterday. My recipe was from Kaylyn's Kitchen. Dh and I liked it but dd did not.0 -

Cook 1/2 C lentils till almost done ,maybe 10-15 minutes,drain. Add to soup or to any recipe that sounds good. Lentils don't have a lot of taste so easy to combine with other ingreds.0
