Cauliflower cupcakes
In my internet travels and in my pursuit of a healthier lifestyles I've come across the ultimate in healthy cupcakes! The Cauliflower Cupcake brings not just tasty but vitamins and fiber and other such good for you things and thus are better than normal cupcakes! It elevates the humble cupcake from a mere child's birthday party fare to a complete and perfect food.

A from scratch cake recipe is a rarity these days... if I want cake I buy a box cake mix and then substitute the oil and eggs for 10 oz. of diet soda.
The trend to use cauliflower in place of- well, pretty much everything- is what the zucchini trend was in the 80s... you can pretty much use zucchini as a healthy substitute for a lot of things, too. Applesauce is another good recipe substitute for oil and eggs.
With oil, eggs, flour and sugar as the base, I'm betting these taste pretty good.0 -

I dont think a cupcake's goal is to bring health, wellness, and vitality. It's to be a sugary creamy bad-for-you treat; a guilty (or not) pleasure. These aren't better as cupcakes, maybe as complacent cupcakes lol0 -

I would try these! They look promising and as a lover of zucchini bread and carrot cake I am sure they are quite tasty. Also, I have noticed when there is more nutritional value in your food you don't get that weird icky feeling like you do when you eat something like regular cake.0

Curious. Are you suggesting I created a website, made up a recipe, and took pictures of the baking process and the finished product then got some blogger to put it on her website? Because otherwise this recipe does exist for purpose that certainly isn't screwing with MFP and may just be a tasty treat with a bit of healthy content to it.

I made Black Bean Brownies the other day and they turned out amaaaaazing, so even though Cauliflower Cupcakes sounds like cupcake sacrilege, I'd be willing to give them a shot.

No... I was just suggesting that you looked up the recipe for the purpose of inciting an uproarious debate of the use of cauliflower as a "healthy" alternative. As I have pointed out, this cupcake recipe is no different than any other cupcake recipe beyond the few additional nutrients created by combining a bland vegetable with a sweet fruit.
