I would make a pot of pinto beans or 15 bean soup with it. In the crock pot for a long slow cook.

I use leftover ham/ bone in or just cubed if bone was boiled and given to pup for a great ham and lentil soup. It sits in my slow cooker all day and is one of the family's favourite meals plus great for protein and fiber. mix of lentils, ham chunks (bone in obviously discarded once done) sliced celery, cubed zucchini and cubed carrot with a container of chicken broth (either home made or store bought larger box), a few bay leaves, salt, pepper and a couple tbsp of dried oregano then fill the rest of the pot with water and leave on low all day or high for 3-4 hours.

ETA: I throw in some baby kale/spinach in at the end in my and my man's portions, the kids have trouble spooning it out but it adds great flavor.

I made Pot Liquor Soup last year. I am trying to decide if I will make it again this year or make 15 Bean Soup. soupspiceeverythingnice.blogspot.com/2013/04/pot-liquor-soup.html

Put it in your slow cooker in the morning before work with some black eye peas and cover it with water. They'll be done when you get home. All you need to do is make some cornbread to go with.

You can make and freeze ham stock just like you would chicken or beef stock and keep it in the freezer for cooking vegetables, adding to canned beans for quick soup, etc.

Beans, split peas or lentils! Yum, yum!! Ham bones are gold!! They also keep in the freezer, well-wrapped, for a good long time, waiting for their trip to the bean pot.

If you don't have a ham bone, look for any smoked, bony thing at the supermarket, e.g. smoked pig knuckles, smoked turkey wings, etc. My freezer usually has a small collection of such things ready for the soup pot.

    Try roasting the bones first.

I'd make a broth and then add whatever leftovers, vegetables are on hand.

^^This, definitely! I have my ham bone in the freezer and am making the soup on Saturday. Some chopped up onions, carrots and celery. Low sodium chicken broth. Crock pot all day. Enough for lunches next week too.

First time cooking with a ham bone today!

I just put a ham bone in the crock pot this morning. Soaked 1 lb of northern beans overnight then rinsed put them in the crock pot.

I added chopped onions, 1 cup or so of ham, garlic, sage, a little cumin, pepper and 6 cups of water.

It smelled good - we will see if it is good tonight. I am going to make cornbread and cheddar bay biscuits to go with it.

Sounds delish! I always like to serve home-made crispy biscuits to go with the soup.
