Chicken Fiesta Soup (Crock Pot)
Chicken Fiesta soup (like tortilla soup with out the tortillas )
All measures are in US.
4 chicken breasts (about 1 pound) (marinated/seasoned, cooked, shredded)
1 can (14 1/2 oz) stewed tomatoes drained
2 cans (4 oz each) chopped green chilies
1 can (28 oz) enchilada sauce
1 can/box (14 /12oz) low sodium chicken broth
1 (15 oz) can of black beans drained
1/2 cup ketchup
1 TBS sugar (too cut acidity leave out if you like)
1 tsp Cayenne pepper (too taste (hot))
1/2 tsp red pepper flakes (too taste (hot))
1/2 cup clean water
1 cup finely chopped onions
2 cloves minced garlic
1 tsp cumin
1 tsp chili powder
3/4 tsp pepper
1 tsp salt
1/4 cup fresh chopped cilantro
1 cup frozen corn
1 medium yellow squash diced
1 medium zucchini diced
Combine all in crock pot. Cover cook on LOW ~6 hours.
Makes about 8 serving.
If I entered the ingredients right this is about 200 calories per cup.
My toppings of choice:
2% Kraft mexican shredded cheese
low fat sour cream

Some times tap water has a taste, odor, color, that you shouldn't put in foods (soups). I'm a freak like that. So I use filtered water. Sorry it was something I had written in my recipe.0 -
