DH made a comment that I was getting kinda lax in the dishes that I make, a bit boring. So I made Doughnut Waffles for breakfast this morning. MEH, not so much.

    Baked potato breakfast bowl is a weekend favorite...

    Except in these pictures I baked the egg for about 2 minutes too long so it was medium rather than a nice runny yolk...but I don't make that mistake often.

    mistikal, they looked a whole lot prettier than they tasted, but the BACON was great! I fill up a foil-lined rimmed baking sheet with bacon (about 10 strips) and bake it off until just barely crisp, MMM... the leftovers go into a Clubhouse Sandwich for lunch...

    I followed the Williams-Sonoma recipe for Provolone & Pancetta stuffed Chicken Breasts, we had that for dinner the other night, so this is the leftovers as a sandwich, MMM!

    Hollow out a baked potato enough to make a bowl to put the egg and other stuff in but not so much that there's no potato left...I like potato. I usually line mine with a thin layer of sour cream and Hatch NM Green Chiles and drop the egg in. Little S&P and a bit of good cheddar, bacon crumbles, and chives. Bake until eggs are set...about 20 minutes @ 350* is good...I went a couple minutes over on this round and the yolk ended up medium...I was outside when the timer went off.

    I throw on some more fresh chives at the end when serving. I've experimented with different stuff too, but this is my favorite.
