    Dijon Pork and Asparagus Saute'

    4 Thick cut boneless pork loin chops (about 1 1/2 lbs total)
    2 Tbs Chopped Tarragon Leaves
    1/2 tsp Salt
    1/2 tsp Pepper
    2 Tbs Olive Oil
    1 lb Asparagus, sliced at an angle
    1 bunch Green Onions, sliced
    2 Tbs fresh Cilantro
    1 Tbs Minced Garlic
    1/2 cup Chicken Broth
    1 Tbs Dijon Mustard

    Rub pork chops on both sides with tarragon, pepper and salt.
    In 12-inch skillet, heat 2 Tbs. olive oil over medium high heat until hot.
    Cook pork 5-minutes or until browned on both sides. Turning once. Transfer to plate.
    To same skillet add Asparagus, Onions, Cilantro and garlic. Cook for 3 minutes stirring to saute'.
    Add Chicken Broth and simmer 2 minutes. Stir in 1 Tbs Dijon Mustard.
    Nestle Pork Chops into asparagus. Cook another 2-4 minutes or until veggies are tender and pork is done.

    when i planned my meal, i wasn't even thinking of Cinco De Mayo ~ but i was had Tex/Mex planned and it was delicious! I especialy LOVE the rice ~ just something different than your average white rice
