I created these today, they're so good had to share. And only 115 calories, low in sugar too.
Makes 24 cookies
1/4 cup Shredded Unsweetened Coconut
1/4 cup (30g), Walnut Pieces
1/4 cup Coconut Oil
1/4 cup, Butter - Salted
1/4 cup chocolate Mini Morsels (Nestle)
1/8 tsp. Salt
1/4 tsp, Baking soda
1/2 tsp. Baking Powder
1 White Spelt Flour (or flour of your choice)
2 TBS. Organic Blue Agave syrup
1/2 c dry Old Fashioned Oats
1/4 cup Truvia sweetener ( may use a little less depending on your taste)
1 Large Egg
1 tsp Vanilla extract
Preheat oven to 350 degrees. Spread coconut flakes & walnut pieces onto baking pan and toast for 3-5 minutes, check in a few minutes to stir.
Melt coconut oil & butter in large bowl in microwave, 1 minute.
Let oil cool, then add toasted coconut & walnuts. Add egg, vanilla, agave & Truvia & blend. Then blend in remaining ingredients.
Drop by teaspoonful onto sprayed cookie sheet. Bake at 350 for 10 minutes. Let cool a couple minutes before removing from pan.
