    YUM! I'm making cabbage stir fry for supper, at our 4 year olds request! I wouldn't have ever touched it as a kid. It's such a versatile ingredient!

    I usually roast mine, but I adore it sautéed with onions and garlic. Throw in some egg noodles and I am in heaven.

    I actually wanted to delete this post but couldn't figure out how, glad now I didn't :)
    I'm gonna have to try the cabbage and bacon frittata tonight, never thought to put cabbage in a frittata :)
    Do you cook the cabbage first, did you add anything else?? Thanx! :)

    It's not really a frittata, more like crustless quiche - it was supposed to be, but I don't trust any of my pans for the oven - I baked the whole thing!
    Chop and cook 4 slices of center cut bacon until crispy, then remove from the pan. Saute 8 oz of thinly sliced cabbage in the bacon grease until soft. In a separate bowl whisk 4 eggs, 4 egg whites (or 3/4 cup of liquid egg white), and 1/4 cup of nonfat milk - season with salt and pepper. Pour the eggs, cabbage, bacon, and thinly sliced scallion on top and bake in the oven in an 8 inch cake pan lined with parchment paper. 400 degrees for about 20 minutes until set.
    4 slices, 144 calories each slice - it keeps in the fridge all week or you can freeze it to reheat.

    I make cabbage/sausage stir fry with whatever I have. Venison hot dogs or sausage, kielbasa, Italian sausage. Or my FAVORITE stuffed cabbage! With ground beef, onions, mushrooms, seasonings, and my favorite tomato sauce!
