What to do with 100 cucumbers?

My garden is doing really well, and my 4 cucumber plants are beginning to produce. I have 100 blooms and several are beginning to make cucumbers. I plan on pickling some and making cucumber and tomato salads with some. Anyone have any awesome cucumber recipes. Either ways to can them or store them or actual fresh cucumber recipes?

    When I had an abundance of cucumbers last summer I made refridgerator pickles with them. Very easy and my kids (and hubby) loved them! :)

    I like to eat them plain myself, so they don't really last long in my house...but I agree with refridgerator pickles! My kids like 'em too!

    Make a Tzatziki sauce wtih low-fat plain yogurt and some chopped garlic and dill. Yummy as a spread or dip!!

    Mmmmmm, homemade canned pickles are the best!

    Tzatzki sauce would be a nice thing to have around, you can use it as a low fat alternative to mayo on sandwiches, or a salad dressing, etc.

    Dice cucumbers, tomatoes, onion, dump in a bowl with some white vinegar, a dash of salt and pepper. Makes a wonderful salad!

    Tabouli with cucumber!

    Pickles, preserves & chutneys keep for ages and go really well in sandwiches, with cold meat salads, with cheese & crackers, with pate, with indian food.... Just buy some empty jars (or collect & sterilise your own) and get cooking!:

    Or- Tzatziki. Mix greek yoghurt with a couple of cloves of crushed garlic, a bunch of fresh dill or mint, lots of chopped/grated cucumber & a squeeze of lemon juice. Will keep for several days in the fridge and goes amazingly with almost any meats/ salads/ pitta breads etc...

    tzatziki. doesn't exactly use up a lot of cucumbers but it is delicious.

    i grate up one large cucumber (skinned n seeded), added to one tub of greek yogurt (fage 0%), juice of half a lemon, dill, salt & pepper.
    It should have garlic too but i omit it.
    eat it as a dip, spread it on sandwiches, or i even use it as a "sauce" for fish.

    ohh, slice em up and squeeze lime juice over them and then sprinkle with tony's!! Adds a little spice to em, soo yummy

    Creamy Cucumber Soup
    serves 2 ~ $.77 per serving


    1 cucumber ($.60)
    1 avocado ($.78)
    1/2 medium onion ($.05)
    1 clove garlic, pressed
    2 tablespoon olive oil ($.10)
    1 cup water for blending
    salt and pepper to taste
    red pepper flakes



    Finely dice a 2 inch piece of cucumber and set aside for later. In a blender, puree rest of the cucumber, avocado, 1/4 of the onion, garlic, and olive oil. Chop the cucumber and avocado first to make blending easier. Add the water as needed for blending. Let this blend for a minute or two, to get really creamy. Salt and pepper to taste. Top with a bit of the reserved diced cucumber and onion. Sprinkle with red pepper flakes and add a small drizzle of olive oil, if desired.

    I make lime pickles!

    This is the same recipe I use, I think...but I found it on the internet:

    2 cups lime for lime water

    2 gallons sliced cucumbers

    2 quarts Apple Cider vinegar

    9 cups sugar

    1 Tablespoon salt

    1 tsp. Allspice

    1 tsp. ground cloves

    1 tsp. celery seed

    Prepare the lime water by mixing two cups of lime per two gallons of water.

    In a crock, large pot or bucket, let the cucumber slices stand in 2 gallons of the prepared lime water for 24 hours. Wash, then let stand in clear water for three more hours.

    Prepare the syrup mixture by adding sugar, salt, Allspice, cloves and celery seed to two quarts of Apple Cider vinegar. Add cucumbers. Bring mixture to a boil, then simmer for 35 minutes.

    Fill the canning jars with the pickles, pouring in enough of the syrup mixture to cover the pickles. Seal the jars. (If this is your first time making pickles, I suggest placing the jars in a large pot. Cover the top with water and boil for about 10 minutes. Let cool. The lids will seal themselves as the jars of pickles are cooling.)

    How about raita? It's cucumbers, yogurt, mint, cilantro, cumin salt and pepper, chilled and served. Awesomely refreshing on a hot summer day.

    you are so on the same page as Me, i was going to suggest raitha, too!! totally delicious as a dip with nachos, crudites, celery sticks or a side or even as it's own. I have also had it with pomegranate seeds and even pineapple, but your suggestion for the basic simple down home version is the BEST...the cumin really does add an incredible flavour to it, and it's even better if you use home made youghurt. you simply MUST try this dish!

    Take a pie plate, baking dish, jelly roll pan, anything you would make a layered dip in. Spread hummus (any flavor) in bottom of dish. Chop up cucumber and tomato and sprinkle on top of hummus (according to your liking, I like alot of cuke and tomator on mine), top with feta cheese and serve with pita chips, tortilla chips, vegetables, etc. as a dip. So very good.

    Trust me, it is freaking good. It is addictive, I can't stop eating it when I make it.

    Soak some cuke slices chopped white onions in vinegar for a few hours, then drain them and add sour cream to coat them.
    Sprinkle with dill and salt and pepper.

    OR

    Cucumber water. I don't know why, but it's soooo good. Just slice up cukes and put them in a pitcher of water and put it in the fridge. So refreshing!

    OR

    Put cucumbers in a food processor with some onions, a little bit of water, enough plain nonfat yogurt to make it creamy, and some dill. It makes a yummy dip for crackers that has very few calories.

    Tzatzaki is the best choice, and very addictive!

    I also like cucumber in mint yogurt... just mix chopped 'cumber, onion, low-fat yogurt and mint.. simple and yummy =)

    Look on www.allrecipes.com. I once found a fried cucumber recipe where you coat the slices in corn meal and then fry (you could easily bake them instead) and they were AWESOME! They have some great recipes there.
