This is probably a stupid question, but I am curious to the answer.
When I cook my potatoes with skin on, be it frying, baking, etc, does it affect the potassium amount?

Yes, based on the USDA data. So for example, raw would be 424mg per 100 grams. Microwaved, would be 411mg per 100 grams, and boiled would be 379mg per 100 grams.0

Further, you can leech even more potassium from the potatoes if you soak them before boiling. This is helpful when you're cooking for a dialysis patient with a potassium restriction.0
