Brown rice and roasted veggies with cottage cheese is simple and lasts til Wednesday if you cook enough of it and if you get bored you can always chuck in a tin of tomatoes with some chilli flakes to change the lunch/dinner time meal.0

You could cook from scratch lasagne and potion in to pots and freese. Spagetti Bolognaise (just the bolognaise bit) then cook the pasta fresh when needed. Homemade curries are good again cook the rice when needed. Stir fry's are easy and quick to do in a hurry too.
