Egg muffin ideas wanted!

I am going to make egg muffins this weekend for a quick and easy breakfast for myself and my husband next week. The three ideas I have so far are 1) egg, spinach, cheese, topped with a tomato slice, 2) egg and chorizo, 3) egg, turkey sausage crumbles, and cheese. What other egg muffins have you come up with? Although I don't like onions, bell peppers, mushrooms, or avocado, feel free to share recipes with these ingredients for others!

    I don't make muffins, it's more of casserole, but it's the same concept. I roast all my favorite vegetables, add the eggs and baby spinach and top with homemade salsa.

    I didn't even think about roasting some veggies first. Great idea!

    I love these Ham/spinach quiche cupcakes, and they're only 40 calories each.

    Awwwww. I always add a little onion or bell pepper. My favourites.

    To get creative, why not pick an in-season vegetable on sale that you've never tried? Nearly anything will do.

    I've also put feta in mine. Or finely grated parmesan. Try mustard, dry or prepared. Smoked paprika is good, too.

    I made these last weekend and they are fabulous! You could leave out the green onions - I did. I added in about 1/2 of a minced yellow onion and I couldn't even taste it.

    Elegant Eggs in a Nest - one of my all time favorites. Looks impressive and very easy to put together for larger groups. Add veges, bacon, whatever to suit your taste. I just put several bread slices on a baking sheet when making large batches.

    Zucchini & Red Onion, with tsp of McCormick Steak Seasoning. Every week...it is the tastiest option I've made to date!

    I use steamed broccoli in my and sprinkle of parmesan on top.

    My personal favorite is some chopped kale or spinach, red bell peppers, diced yellow onions, some chopped broccoli (trust me, it's the perfect touch), and just a PINCH of cayenne with some black pepper. You won't be sorry! It's delicious and always my go-to for egg muffins :)
