Pastrami Pillows: Great for mini snacks or appetizers.
Makes 12 small pillows: 11 calories each; .04g Fat; .13g Carbohydrate; 0g fiber & sugar; 2.42g Protein
Ingredients:
6 egg whites (I find real separated egg-whites work well)
1 oz pastrami (one generous slice)
2 Tablespoons sauerkraut
Spray oil
Method:
Preheat oven to 350F
Spray a mini-muffin tray (12 mini-muffins)
Divide each egg white between two mini-muffin cups
Dice pastrami and divide evenly among 12 cups
Place ~1/2 tsp sauerkraut in each cup
Bake 30 minutes or until tops are golden and eggs are fully cooked.

Sweet Cinnamon Microwave Pillow:
Makes one pillow: <20 calories; 0g Fat, Sugar, Carbs, Fiber; 4g Protein.
Ingredients:
One egg white
Oil spray
shake of cinnamon powder
sweetener of choice: I use sprinkle of stevia powder
Method:
Spray a small-medium sized bowl (watch out- egg will rise temporarily during microwaving!)
Add egg white, cinnamon and sweetener and whip together
Microwave for 2-4 minutes on 50% power (test your own microwave to get exact timing)
