Low carbing pancake lovers! Coconut flour pancakes

If you love pancakes but are low carbing at the moment, you should definitely make coconut flour pancakes!

245 calories for 3 (my batch made 12 in total, American pancake size) which breaks down into 14g protein, 10g carb and 11g fat. Plus you get 10g of the ever elusive fibre!

I tried a recipe recently that was really dry but this one is good! I have just reheated them and they're just as good as fresh last night. http://ditchthewheat.com/coconut-flour-pancakes/

I had mine with strawberries and butter which took it up to 302 calories.

I AM SO HAPPY IN MY LOW CARB PANCAKE HEAVEN RIGHT NOW.

    Thank you! I've tried protein-powder pancakes with great disappointment.

    Those aren't American-sized though...double them and you might be close. :)

    @azulvioleta6 me too! So dry! Ha, it's my British version of American size ;)

    For those of you working in grams like me I used 120g of the coconut flour and 150g of milk. I think I will play around with extra eggs or milk but this is a pretty good recipe as it is!
