How'd you like your omelettes?

I am currently doing:
1 whole egg
2 egg whites
2 handfuls of spinach
1 handful of bean sprouts
1/3 cup of coconut milk

Would love to know how you do yours?

    Typically I do 2 eggs, 2 egg whites, spinach, feta and sometimes chopped deli ham.
    I like broccoli and cheddar too.

    Or just egg whites with spinach, feta, and a few grape tomatoes

    2-3 whole eggs (depends on my cals)
    2-3 eggs whites

    Then I change up my mixins. I use a variety of:
    Cheese: Cheddar cheese, goat cheese, american cheese, cream cheese, feta, mozzarella
    Meat: Chicken, steak, deli ham, bacon
    Vegetables: Red bell pepper (raw and roasted), mushrooms, spinach, kale, onion (raw and caramelized), summer squash
    Herbs: Dill, basil
    Toppings: Sour cream, avocado

    And now I want an omelet...

    3 or 4 eggs
    8 oz chicken or ham
    28 grams pepper jack
    Green peppers
    Onions
    Green chili
    And some tater tots to soak up the yolk. Yes I know it's not really an omelette. I like to call it a yolky mess.

    Pan sprayed with Pam/ 2 large eggs beaten/ caramelized onion/ whatever cheese I have available/ and any left over veg.

    Just gotta have the onions and the cheese...GOTTA have the cheese!

    depending on the ingredients, i would add any or some of the below:
    salt pepper zaatar
    chives
    basil
    rosemary
    parsley
    oregano
    corriander

    herbs preferable fresh

    I am a hit or miss omelette cook. Most of mine look more like a scramble. I like:

    Zucchini, tomato, garlic and provolone
    Green pepper, onion, ham and cheddar
    Tomato, bacon and cheese
    Cheese, salsa and avocado
    Parmesan, spinach, roasted red pepper and basil

    I usually just have spinach and cheese but my favorite is leftover steak with mushrooms, onions and cheese.

    My regular: butter, 2 or 3 organic free range whole eggs, salt, pepper, when they firm a teaspoon of basil pesto and often a slice of cheese, flip the half over the other and finish.

    Or I'll make a sweet omelette, also with a cup of egg whites mixed with splenda and cinnamon, cooked in coconut oil, stuffed with a serving of oatmeal and topped with fruit, peanut butter and sugar free syrup... but I'm weird :joy:

    Simply done. 3 whole eggs, seasoning, 3 chillies, no dairy , or a sunny side up.

    Simply the BEST:
    1 Egg
    3/4 red onion
    1 oz Feta Cheese
    1 tsp olive oil
    Small nonstick frying pan
    1) Turn on small non-stick frying pan & add tsp of olive oil
    2) Chop onion well (i put it in my mini chopper)
    3) Beat egg with chopped onions
    4) Pour egg into pan & lay pieces of feta around

    D-E-F-R-I-C-K-I-N-L-I-S-H.... The end.

    From there it varies - I love veggies, so celery, tomato, onion and bell pepper is normal. Those are pantry ingredients for me as well so I always have them on hand. I will also throw in other veggies I might have on hand so if I have a spare jalapeno or kale or spinach or some broccoli hanging about, chop 'em small and toss 'em in.

    Before dieting, I might have thrown in chorizo or other sausage. If I did one now, I would use Morning Star Spicy sausage substitute. Ham is pretty classic, but I rarely have ham in the house. These days there is a lot more chicken and fish. I've never tried any sort of chicken or fish, but once had a crab meat ommie at the beach. I was not impressed though. Others must like it because I see it on menu's often. I love crab and I love eggs, but the combo just didn't work for me.

    Mix it up with some fresh herbs or spices to get a flavor profile you like. Chives would always work well in my world as does a bit of cumin. If tried tarragon, but I am mixed on the results; seems I like the more earthy flavors. I never go wrong with smoked paprika or some chipotle powder (but I love the smoky flavor and I like some zip to my foods). Obviously match your herbs and spices to your other ingredients. (which reminds me of a book in my collection called the Flavor Bible. I used to use it more when I first started cooking, but not as much anymore. It basically gives you combo's of flavor that work together such as basil-tomato-mozzarella.)

    For a finish or a sauce, I've been known to use ketchup on mornigns I am sluggish. Of course, you can always sprinkle some of the chopped veg/meat on top. I dash of herbs/spice that you used. A sprinkle of good cheddar (shredded) is always nice. I like some spice to my foods, so a hot pepper relish is a fine finish some days. Of course some fresh cracked pepper and a pinch of salt will finish it all very nicely.

    Ommies are great because they are versatile and great for using up the last of a store of veggies that will go bad soon. I use soup and salads for the same purpose sometimes. About the only food group that I haven't considered for an ommie. I just can't see doing a porridge ommie, but hey, others may love it (but i doubt it).

    1-2 eggs, 2-3 egg whites,
    splash of milk,
    soy chorizo,
    chickpeas,
    various veggies.

    Southwestern-style Egg Beaters 1/2 cup
    Pepper Jack - ultra thin slice
    Salsa - Tablespoon - medium
    Guacamole - 1/2 of a mini snack cup - spicy
    Sour cream - 1 tablespoon
    OR
    Just about anything goes in an omelette. Great way to use up veggies and meats!

    Currently I have (3) different versions that I make:
    (1) egg and (2) egg whites then:
    1. Asparagus and mushroom with Cabot's cheddar cheese w/Jalapeno - 50%
    2. Spinach, Tomato, Shallots with Feta
    3. basic Garden omelet - grape tomatoes, peppers, red onion or shallot and Cabot's cheddar

      Then I have some fresh pineapple and if calories allow it, 1/2 an Ezekiel English muffin with it.

    I am glad to see there is a little bit of salad right there on top. Gotta get your greens in at every meal!
