    Three eggs, a teaspoon unsalted butter, chives from the garden, and whatever the fridge offers. I split it in to 1/3, 2/3 the larger for him. He's a "no cheese" guy so if I want some I sprinkle after. I might grate some cheddar.

    I love mushrooms, onions, spinach & usually, but not always, some kind of cheese. Today's was eggwhites, spinach, mushrooms, onion & a little avocado to use up what was there. I made a double portion & am having the rest for tomorrow's breakfast.
    I occasionally use red bell peppers, tomatoes, broccoli -- sometimes just to use up whatever veggies I have on hand. I have also used salsa, chopped green chiles, & asparagus -- just depends on what I have on hand.

    Try adding in some Cottage cheese before you fold over, it is SO good and adds a creaminess with a lot of extra protein!(:

    2 egg whites, 1 tbls hemp oil. Handfull of spinach. Wrapped up inside a large lettuce leaf... OR.. On 1 slice of toasted Chi seed bread.

    I'm reading this at 3 am and have decided on a mushroom omelette for breakfast. Now I need ideas on how to get back to sleep.
