It's too hot to cook, help me make something with these ingr

So I've got about 400 calories left for the day for dinner. Keep in mind we're vegetarian. I'm looking for something low key to make. Here are the fresh veggies and some basics that I have. I have obviously all the ingredients a typical house cook should have around the house as well. Anybody have any suggestions?

Cucumbers
Red and Green Peppers
Asparagus
Portabello Mushrooms
Onions, both red and sweet
Canned Garbanzo Beans
Minute Rice
Pasta
Tortilla Wraps
Way too much Lettuce of different variety

    How about a salad using a variety of your lettuce, some cucumbers, red peppers for a starter

    Grilled asparagus and onions with rice/garbanzo bean/mushroom mix seasoned to your taste

    sautee the red peppers with muschroom and asparagus with some garlic and onions.....then add the garbanzo beans and place over pasta......use a lemon/olive oil dressing for it all

    Lettuce wraps with just about everything on your list inside! Cut up a tortilla into strips, bake til crispy and add those to the mix for extra crunch. :)

    i see all the fixins required for some nice veggie fajitas or tacos! use beans/ rice instead of meat (which i dont think you listed)

    I would do a veggie lettuce wrap, with asian dressing. You would have to dice and stirfry vegitables (mushrooms, asparagus, onion, garlic, ginger......what ever else you have that would taste great) garnish with scallions and cucumber and wrap iwith lettuce. sounds good to me.

    If you can BBQ I'd throw some of your veggies out on the grill and make a grilled salad..very yummy...Hmm making me think I might even do that for dinner..:)
