Vegetarian Dinner Recipes!

Help!
My boyfriend is staying over Friday night and is a vegetarian (No meat, Eggs, or Seafood). He is craving something mexican for dinner but absolutely does not want red or green peppers.
Does anyone have any good vegetarian mexican recipes they can share? I've tried looking on vegweb.com and other vegetarian recipe sites and just can't find anything that looks or even remotely sounds healthy.
Would love to hear some ideas! And not even necessarily mexican...just easy, healthy, vegetarian recipes in general!

Try looking for recipes for black bean burritos or enchiladas, with a side of mexican rice. Fairly easy and healthy.0

you can use tempeh and taco seasoning to make tacos or a taco salad. add some homemade gauc and fresh veggies!0 -

I LOVE this easy meal
Red potatoes
Onion
Zuchinni
Yellow Squash
Fresh Garlic
Brocolli
Cauliflower
or any other veggies
Black Beans
Wheat Tortillas
Avocado
Cook all veggies with fresh garlic, lime juice, and teriyaki sauce then eat fajita style in a tortilla topped with cheese and sliced avocado. I'm sorry I don't measure. I also add peppers, but you can omit those!0 -
I like GARDEIN brand frozen tenders.... these are vegetable (no meat) and they look like chicken tenders. My kids have no idea and they are actually very tasty. You can add them to a wrap with cold veggies, or cut up and warmed with melted cheese like a quesadilla, or cut up and add to a Spanish or seasoned rice with steamed broccoli and almond slivers or black beans. I found GARDEIN products at our local Market Basket and there were plenty of other items to chose besides chicken tenders0

You can make chalupas they have a good amount of veggies and beans and you don't have to use any meat.0

I have a recipie for black bean and rice enchiladas! it does have green pepper in it but you could easily omit it.
1 green pepper, chopped
1 medium onion, chopped
3 garlic cloves, minced
1 Tbsp olive oil
1 can (15 oz) black beans, rinsed and drained
1 can (14-1/2 oz) diced tomatoes and green chilies
1/4 C picante sauce
1 Tbsp Chili powder
1 tsp ground cumin
1/4 tsp crushed red pepper flakes
2 C cooked brown rice
8 flour tortillas (6 inches) warmed
1 cup salsa
1 C (4 oz) shredded reduced-fat cheddar cheese
3 Tbsp chopped fresh cilantro leaves
1. In a large nonstick skillet, saute the green pepper, onion and garlic in oil until tender. Add the beans, tomatoes, picante sauce, chili powder, cumin and red pepper flakes; bring to a boil. Reduce heat; simmer, uncovered until heated through and mixture thickens. Add rice; cook 5 min longer or until heated through.
2. Spoon a rounded 1/2 cup down the center of each tortilla. Fold sides over filling and roll up. Place in a 13-in. x 9-in. baking dish coated with cooking spray. Spoon salsa over each tortilla. Cover and bake at 350 got 25 min. Uncover; sprinkle with cheese and cilantro. Bake 2-3 min longer or until cheese is melted.
Serves 8
one enchilada equals 271 cals, 6 g fat, 2 g sat fat, 10 mg cholesterol, 638 mg sodium, 43 g carbs, 5 g fiber, 12 g protein.

How about a healthy vegetarian pizza recipe? I was thinking a pizza....something with hummus maybe?
My boyfriend is indian so I know Naan is always an option but not real sure how healthy it is.
