I had an appointment to count them but have been asking stupid Siri lately. How exactly should I be counting them?
You should be weighing the food on a digital food scale and selecting the appropriate food from this database, accuracy is the key here
In the US they tend to cost $10-$20. Ebay, Amazon, Target, Walmart, and many grocery stores will carry them. But I'm going to 2nd the above commenter. Go easy if you have a history of ED and check in with your doctors.

Was your doctor aware that you are eating under 1,200 calories a day?0 -
Yes but let me just throw in, I'm not intentionally starving myself or anything like that. I do eat, but usually I eat mainly vegetables and fruit. Some meats are okay but I am not the biggest fan of them.0

Your doctor knows you have a history of struggling with ED since you were ten and s/he is okay with you eating under 1,200 a day? You don't have to eat meat to get 1,200 calories a day. I am vegan and I can still consume more than 1,200 a day.0 -
