Lunches on the go

I need to get back into eating right and I have about 50+ pounds to lose. I just got a new job, where I will travel to different buildings throughout the day. I do not have a homebase to go back to every day, so my lunches will need to be packed every day and kept in my car. I have gotten cookbooks and browsed through them for days, and even Pinterest.... I need to get back to eating low-calorie meals that are satisfying. The main issue appears to be that I'm such a picky eater, and that I hate raw tomatoes and every healthy recipe seems to have raw tomatoes as a staple. I do like salsa, tomato sauce and ketchup I just hate raw tomatoes. I do not like fish either, with the exception of tuna in a can. Oh yeah, I probably won't have access to a microwave or fridge either, just a good old lunchbox with ice packs in it. If anyone has any suggestions, especially recipes, I would appreciate any help to get me back on this journey :)

    In the car is the worst location. The car can heat up far more than any insulated lunch box will probably handle. I would suggest taking your food inside with you, even if you have to carry it back out. I do this all the time at my work, but I do have a fridge in every building (so it goes from fridge to fridge).

    As for what to bring, anything you want. Just make it fit within your calorie goal. For example. I try to keep my lunch between 500 and 700 calories. I typically eat one of two 3 things for lunch. A ~400 calorie wrap that is composed of a 90 calorie flatbread wrap, lettuce, peperjack cheese, mayo, and meat (typically chicken) and a small snack (for example, cherries). Leftovers from the night before. Or, 2 slices of my home made pizza for ~750 calories. Of the 3 things I bring, no microwave would limit me to option #1, but I'd personally be fine with that every day.

    You can even take the recipe ideas you like and just remove the tomatoes and see how it tastes. The worst thing that happens is you don't like it, eat it anyways, and don't make it again.

    You could find a good whole grain bread you like for sandwiches. That should run around 200 calories. Then fill it with things you like. You can make tuna salad with plain greek yogurt instead of mayonnaise. Use chicken, avocado, spinach, onions, ham, 2% cheese (you can't tell the difference) all kinds of things. You can use spicy mustard, low calorie mayo, and even some salad dressing as bread spread. A cilantro lime tartar sauce is good with ham and swiss, I know that sounds odd, but it's good!

    Take a fruit cup or small spinach salad on the side. But I don't know how that would work leaving it in your car. I'm not sure any cool pack with ice packs in it can out-cool the heat of a car. But I live in a very hot climate, maybe your circumstances are different. Good luck! I hope you find some lunch foods that you like :smile:

    Hard boiled eggs are very portable and I, at least, find them very satisfying. You could pair two or three with some fruit or vegetables...
