What's your favorite way to make protein pancakes?

I'm currently trying to gain weight so looking for different ideas to eat more. I usually do the simple wheat mix with banana and milk. Any other ideas?

    I use a buckwheat pancake mix (Arrowhead Mills) and add PB2, an egg and ground flax. The recipe calls for milk, so that is also in there.

    I eat them with eggs and bacon.

    I suppose you could throw in some protein powder and a little more liquid.

    I love Target's Kodiak mixes. The power cake one has 190 calories and 14g of protein. I often have it just mixed with water and with ham, cheese and egg for extra protein.

    Or if I want sweet pancakes I make these, and they turn out absolutely delicious... (it was posted in another thread)

    1 serving Kodiak power cakes
    50g ricotta (or cottage cheese)
    1 egg
    1/2 scoop protein powder
    bit of water

    I use part skim ricotta and Quest powder (caramel right now) and it comes out to about 400 calories and 40g of protein.

    If you don't have that mix, I like ricotta pancakes

    but I add fruit or they are dry.. but to be honest I haven't made them in ages because I like the Kodiak mix better.

    I make this a few days a week for my kids. It works for waffles too. It happens to be gluten free because we have celiac in the family.

    7 eggs
    1/4 c coconut oil
    1/4c chia
    1/4 c hemp
    1/2 c flax meal
    1.25 c to 1.75 c coconut milk or milk
    2 scoops protein powder
    2 bananas or can pumpkin (add pumpkin pie spice if use pumpkin)
    1/2 c coconut flour
    1 tsp vanilla
    1 tsp baking powder
    salt
    ~1 Tbs cinnamon

    1 scoop chocolate protein powder, 1/3 c oats, 1/3 c egg whites, 1 splenda packet, cinnamon. Blend in mixer - cook in skillet - top with 1 TB organic natural peanut butter w/ flax & chia seeds.
