fake fried zucchini!

4 cups sliced zucchini
1/2 cup panko bread crumbs
1-2 table spoons Parmesan cheese
black pepper to taste
little bit of milk (i used almond milk)

Mix all dry ingredients together
dip zucchini in milk, then press in panko mixture on both sides
spray baking sheet with a little pam.
bake at 400 for about 30 min...just watch them

about 55 calories for a cup. They dont stay crunchy if reheated, so are best same day =)

    mmmm... I make this too. It also works with yellow squash and eggplant. I have made a yummy eggplant parm like this ;)

    This is good! I like mine with ranch as a dipping sauce. Makes a satisfying replacement for French fries, in my opinion. Not bad with ketchup either.
