Just wanting to hear what's on everyone's menu for more dinner ideas. :-)

    Spaghetti and Spaghetti sauce with tuna and vegetables! Not very imaginative but it's food. Rest of the week I have french onion soup + crackers; a salad (avocado; tuna; corn); And depending on my exercise level, I might have spinach lasagna (very light on the cheese)

    Cauliflower, tomato and goat cheese casserole with chicken on the side. I'll make a yellow rice for the rest of the family.

    I am doing a spinach / tomato penne with some fresh parmesean cheese sprinkled on top. Wait...why is parmesean underlined in red...great...I spelt it wrong didn't I??? It is to late to go back now! I have committed to the post!!

    Chicken thighs (probably baked), spaghetti squash and peas with parmesan and a side of cranberry sauce.

    Last night was pork tenderloin, baked potatoes and roasted veggies from the grill.

    I made a quick meal due to some chores I needed to finish this evening.

    Blackeyed peas and mixed greens.

    1. Saute medium chopped onion in tablespoon olive oil.
    2. Add 3-5oz of prepacked/rinsed spinach or mixed greens. Cover, stirring occasionally until wilted.
    3. Add two cans of well-rinsed black-eyed peas.
    4. Heat beans through and add spices, such as pinch of cayenne and black pepper.

    Makes 2 entree sized portions of 357 calories each. 19protein, 7 fat, 60 carbs.

    I saved the other portion for lunch tomorrow.
