Soup ideas needed

I have a few soup recipes I rotate: bean soup, lentil soup, carrot soup, minestrone, bouillabaisse, italian meatball soup.
For sure I have tried others at times, but these are ones I have mostly been cooking the last years and my kids are getting bored with them.
I am looking for new ideas to add variety. So, what is your favourite soup?

I made green veggie soup with cashews yesterday.
It was a bit of a "clean out the fridge" affair, so it looked something like this:
- 1 red onion, chopped
- 2 stalks of celery, chopped
cooked in about a tsp of olive oil until soft;
then I added a few spices (cumin, nutmeg, dried oregano) and:
- 1 bunch of broccoli, broken up
- 1/4 head of cauliflower, broken up
- 1/2 cup raw cashews
- 1 teaspoon of stock powder
- about 2l of water
and let it simmer.
When the veggies were soft, I added:
- 1/2 bag baby spinach leaves
- 1/2 cup frozen peas.
and cooked it for a couple more minutes, then left it to cool.
Then I blended the whole lot up with about a cup of skim milk and a bit of ground black pepper.
Delicious! The cashews blend up into the soup and give it a nice flavour and a bit more fat and protein.

Have never thought about cashews in a soup! My kids love them, so this might work, even though they hate cauliflower.0 -
I LOVE all kinds of soups. I am making Chicken Tortilla Soup today.
I make this Spicy Beef Vegetable Soup a lot too. You can use beef, turkey or 2 cans of beans. Really easy!
If your family likes bean soup maybe try a 15 Bean Soup or a Taco Soup. I hope this helps with some new soup ideas.0 -
I freeze soup in individual portions, so I usually have between 3-6 different types on hand.
My favorite soups are:
Buffalo Chicken Soup
Roast chicken soup with roasted vegetables (I do the double butternut and no sweet potato)
Jalapeno popper
Crockpot minestrone (I don’t even add the pasta, but if you do, don’t add the cooked pasta until you’re eating it)
Crockpot Enchilada (I use zucchini instead of beans)
Tomato blue cheese (I swap evaporated skim milk for the cream)
Loaded baked potato (can swap cauliflower for all potato)
Thai chicken coconut
Split pea (I use smoked turkey neck)
Slow cooker white bean

OH MAN!!! There is a knock off of the Toscana soup at Olive Garden on the all recipe.com site...and if you throw some kale in..HOLY it is amazing0

I just finished off my split pea soup today.
8oz split peas
4 cups chicken stock
2 cloves garlic
6 oz cooked pork loin, chops, or a few slices cooked crumbled bacon
Cook in a pot on low for 30 min, or crockpot on low 4 hrs.0 -
My go-to soup is Chicken Tortilla. It's really very simple and I like my version better than what I can get at the Mexican restaurants around here and I live about 50 miles from the border. The main part of the soup is chicken broth/stock, salsa, shredded chicken (leftover rotisserie chicken works great), and diced tomatoes. I just start with the broth, tomatoes and chicken and then add salsa to taste. Pace Thick and Chunky works great if you don't have access to fresh salsa. At serving time add cheese to the soup so it melts then a handful of tortilla strips and some diced avocado. If you like cilantro add that, too. (My husband loves it, I hate it and it's supposedly better fresh so adding it at the end is best for all concerned.)0
