Spinach and almonds are both nutritional superstars. Blueberries are loaded with health protective antioxidants. Eat this salad and your body will thank you for it
8 cups (2L) spinach
1 cup (250 ml) dried or fresh blueberries
1/2 cup (125 ml) sliced, slivered or chopped almonds (Toasted, optional)
1/2 cup (125 ml) crumbled light feta cheese
Dressing:
1/2 cup balsamic vinegar
1/3 cup olive oil
1/3 cup maple sugar
2 tablespoons spicy brown mustard or Dijon
1 clove garlic, finely minced
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Directions:
1. In a small bowl, whisk together the salad dressing ingredients
2. Toasting the almonds is optional, but it does intensify the flavour. To toast, place the almonds in an ungreased saucepan over medium heat. Stir them often, so they don't burn. They are done when golden brown. This should take about 5 minutes.
3. Place the spinach, dried or fresh blueberries, almonds and feta cheese in a large bowl. Gently toss salad with the dressing and serve

Sounds delicious, and I'm always looking for a new dressing for spinach salad. I must admit I mostly clicked on the thread to find out what "map" was! LOL
Thanks for sharing.0
