    1/2+ lb of catfish topped with tzatziki and some salsa, sweet potato with Greek yogurt/ sweetener/cinnamon, and grilled zucchini:D I was low on protein and got home late......lots of fish!

    I wrapped a slice of deli turkey and a little cheese inside a canned biscuit and baked it. I made four of them for a total of 338 calories. They were kinda like turkey and swiss sliders! I wish I had taken a picture, but I'm sure I'll make them again.

    Salmon thai curry. I thought I'd picked up red thai curry paste, but I picked up massaman which was awesome. It had green beans in it too and served with chickpea dahl.

    A light salad with pickled cherry tomatoes, olive oil, balsamic, walnuts, greens, and romaine.
    A margherita pizza with fresh tomatoes, basil, and paper-thin crust
    Cherry and ricotta "cheesecake"

    Tonight, my dinner was totally made up. I had no clue what I was going to make and did not want to stop at the store on my way home.

    I remembered that I had two scallops left, in the freezer. Well, that is not enough to make a dinner. Then I remember the lentils, also in the freezer.

    Caramelized onions, spinach, peppedew pepper, lentils and the scallops with coarse black pepper and Nu-salt.

    Then, there was the addition of a wedge salad with bleu cheese.

    Viola, a fabulous rustic dinner.

    Pasta last night! Creamy vegan avocado carbonara with fresh herbs, roasted tomatoes, and toasted peanuts. Also lots of very cold Guinness. Let's just say it wasn't low cal, but oh so delicious :-)

    Oh and a nice cold glass of Riesling.
