Chicken breasts seem to be a awesome high protein good meal for me. However, what do you add to them ? I am seeking simple recipes with chicken breasts so I don't get burned out from eating them.

    I boil the chicken so I can shred it.
    I sautee diced tomato, onion, bell pepper, and garlic in a little bit of oil.
    I add the shredded chicken to the sauteed veggies - add seasoned salt, pepper, and a little worchestershire sauce.
    Mix until all is well incorporated.

    This prepared chicken I use for tacos, tostadas, and enchiladas. :yum:

    Preheat oven to 325*,lightly saute both sides...using any seasonings you like.Put skillet in oven,no lid needed for 15 minutes.
    Use thermometer or cut the breast to check for doneness.Cover with foil or lid for 1/2 hr.Dice & freeze ....add to salads,pasta,soup...just any dish you like chicken in.

    I just roast or crockpot mine with some seasoned salt. Once it's cooked, I can use it for meals all week, or portion it out and freeze. We like ours served with sides, on sandwiches, salads, or tacos, casseroles, etc.

    I've done this recipe a couple of times, it's pretty good. Marinate it the day before and throw on a grill or George Foreman.

    Note that the allrecipes site is assuming you consume all the marinade - you can get more accurate macros if you calculate the actual amount of marinade absorbed.

    I love chicken breast cook in a slow cooker with salsa....yummm or just diced tomatoes, cilantro, onion,garlic and peppers ....(bell, and I like a hot pepper also) salt and pepper to taste..........oh yes delicious

    I like to toss a couple of chicken breasts in the crockpot along with my favorite jarred spaghetti sauce. I shred the chicken once its cooked and the serve the mixture on top of zucchini noodles. I actually prefer this to traditional pasta.

    Take your favorite crockpot pulled pork recipe and switch out the pork for chicken breasts. Delicious served on fresh rolls and topped with coleslaw or on a baked sweet potato.

    I boil the chicken. Chop some, shred some add different Flavors - pesto, salsa, chilli, bbq, curry etc and throw it in a wrap, bread or over rice :)

    Smash them with a mallot/rolling pin and season with garlic and onion powder and paprika, then pan fry. Pounding them thin will make them cook quicker - less time in the pan will make them tender and juicy.

    I mostly bake mine. Sometimes I just sprinkle Mrs Dash, taco seasoning, or whatever mixture of spices I have on hand. Marinate with different salad dressings, balsamic vinegar, etc. Top with things like cheese, pesto, salsa. Sometimes I coat in mayo/sour cream/greek yogurt and dust with bread crumbs or parmesan cheese. You can also do crushed pretzels, special k cereal, etc. The options are endless. Pinterest is a good resource.

    Last night I made parmesan baked chicken and it turned out amazing.

    Preheat oven to 375. Mix low fat mayonnaise with shredded parmesan, garlic powder, salt and pepper. Brush the mixture on top of the chicken breast (be sure to cover the entire chicken breast to prevent drying) and bake uncovered for 45 minutes (less if the chicken breasts are thinner). Comes out so juicy and tender and takes only a couple minutes to prep.

    This. Put in a couple breasts, a jar or two of your favorite salsa, and cook in your slow cooker for 6-8 hours on low heat. You can shred it up and then eat it however you want. We'll use it for burritos, stuffed peppers or tomatoes, or even mix it with some chicken stock and beans for a spicy chicken soup.

    There's so many things you can do with chicken

    Make chicken spaghetti with broccoli

    Stuff chicken with mushrooms, spinach and pepperjack and swiss cheese

    Make a chicken BLT sandwich

    You can do more with chicken than beef or fish

    Baked. I get a bottle of North Carolina BBQ sauce, throw it in with the chicken, 375 for an hour-ish. I throw in my potatoes at the same time, just quartered lengh-wise with some EVOO and Lowry's...I usually let the taters go a little longer than an hour to get them a bit crispy...but it's an efficient process for me.

    I always sautee onions, peppers, and jalapenos in a pan and add to whatever protein I'm eating...so simple and makes blah taste amazing. I ususally have a protein with my sautéed vegies and quinoa or rice or on salad.

    This is a staple at our house, but we usually use Stubb's BBQ and have it with rice. Throw in a side of steamed or roasted veggies and that's a nice meal right there!

    Cube into bit sized pieces and parboil, until almost cooked through. Toss in frozen corn, peas, and canned or fresh mushrooms. Once all is cooked pour in a can of cream if chicken soup and mix. Serve over rice.

    Toss in a ziplock bag with pesto. Bake at 400 then top with tomato slices and mozzarella then turn on broiler to brown.

    I made a version of my mom's schnitzel recipe tonight, and it turned out to be delicious!

    In the morning, or a couple of hours before you cook, pound two 7 oz chicken breasts with one of these guys to make them even

    Then put the breasts into this marinade:
    - Juice of 1 whole lemon
    - 1/2 an onion, chopped really finely
    - Salt
    - 1/2 tablespoon of oil

    When you're ready to cook:
    - Preheat oven to 425, and coat your roasting pan with a bit of oil
    - Get breadcrumbs. (Or if you don't use breadcrumbs often enough to buy them, like me, toast a slice of your favourite bread until it's super toasted but not burned. Put it on a cutting board, cover it with saran wrap, and roll the wooden bit of that mallet over to break it down).
    - Get the breasts out
    - Beat one egg, salt that (You'll only use 2/3 of the egg)
    - Take the breasts out, wipe off the marinade, lightly dredge them through the egg, and press them into the breadcrumbs.

    Bake them on the middle rack for 5 minutes, then turn the temp down to 400 and leave them there for another 25. You don't need to turn them over.

    For a side, you could boil some baby potatoes. Get the water going while the oven's preheating, and throw 10 of them into the pot at the same time you put the chicken in. Drain them and top with a bit of butter (1/2 tablespoon for 5 potatoes). If you want to get fancy, you could sautee them with a bit of garlic and parsley, but you don't have to.

    One 7 oz breast with 5 potatoes is 488 calories (with the bread and oil I used) and easily filling for one person. (And then you have leftovers.) SO good. I usually hate chicken, and am only eating it to bring my cholesterol down, but I'm putting this into my regular rotation.

    ** I've only marinated them for two hours. I think you could use less lemon juice if they're going to be sitting there all day.

    Try America's Test Kitchen Perfect Poached chicken breasts. Very good flavor and moist. Perfect to eat with sides, or in other recipes that need cooked chicken like chicken salads, chicken soup, etc.
