Potato recipes for breakfast tacos?

Does anyone have any tips or tricks for making delicious potatos for breakfast tacos?

I love breakfast tacos with potato, egg, and cheese but i've never been brave enough to make them from scratch at home. Can't be too hard right?

I've finally got down making fresh flour tortillas and eggs that are great, but how do i get potatoes that are just-right?

I've been slicing potatoes and crisping them up in a pan with some olive oil and spices, but if i don't cut them small enough they dont cook all the way through. If i cut them large enough like i'd like them they never cook all the way through. I tried pre-boiling but then i ended up with mashed potatoes.


Someone help! :)

    If you want larger pieces you could slice and then bake the potatoes for a bit before crisping them in the skillet.

    I have two suggestion. I use leftover baked potato or par boil the potato cubes. Sometimes I bake an extra potato put it in the frig over night then peeled and diced to brown in a little oil for my breakfast tacos. Or I will microwave raw potato until partially cooked then brown in the pan. I have had good results with both.

    I have also bought frozen O'brien hashbrowns and followed the directions on the bag.

    Heh heh. That's the cheat that I use to make it more convenient but if you're making it all yourself baking or microwaving the potato before putting it in a skillet works great.

    If only there were pre-made potatoes or hashbrowns where i live. :smile: I have to go the home made route.

    I'm gonna try baking tonight, but microwaving! Duh! I didn't think of that either. >_<

    Also you can wash and scrub a medium size potato, stab with a fork a few times, wrap in paper towel and microwave on high for 3 minutes, flip and microwave for 3 more minutes. Let rest for 5 minutes. It make a nice baked potato. My family loves them. I have one friend who is really picky about his baked potatoes and he did not go for it at all. For me it works when you don't have the time for baking in the oven.

    Try soaking the cold potato to remove some of the starch, and patting dry.

    I chop potatoes and roast in the oven with a little olive oil spray, salt and pepper. I keep them in Tupperware in my fridge for the week for various recipes.

    (Im sort of a partial meal prepper)
