I eat half and store the other half in the fridge. The half that goes in the fridge it should still have the pit in it, this is what keeps it from going bad. I wrap it tightly in plastic or put it in a container. It must be eaten the following day though. Sometimes theres a small layer of brown on the very top, but you can slice a thin layer, throw it out and its all fresh and green under.

This is what I do too, except I haven't noticed much difference leaving the pit vs removing it. Wrapping half in plastic wrap, pit or no pit, does the trick, assuming the avocado wasn't over ripe and stringy to start with it should still be fine the next day.

You can also treat an avocado like an apple and cube it and lightly toss with a little lemon or lime juice or vinegar and then cover in a bowl or tupperware. But even then, a day (maybe 2...) is probably all you'll get out of it.

    And there's always guacamole.

I store them like I store tofu, in the fridge under water. You need to keep air off them and submerging them in water does the trick. They high fat content prevent the fruit from absorbing the water.

Really? I never heard of this! I'm going to try it!

This is interesting, I've never heard of this method before. How long can a submerged avocado keep this way?

It's not bad, the sugars have just oxidized. The pit and some lime juice will help it not brown, but there is nothing wrong with eating it. They just look ugly.

The pit has been magical for me. You can even make guac and then add the pit back in and it does help keep the color. However, it's totally true that the fruit has not actually gone bad when the color changes. It just looks nasty.

I'm not sure. I've never kept it long enough for it to go bad, but I've kept it for 3-4 days.

I keep the pit in, wrap tightly, and usually add a bit of lemon juice first. I will normally eat it the next day and it's fine.

(Going to try Need2Exerc1se's method, though.)

As long as you wrap it up good and leave the pit in the avacado it will stay good for about a week
