Post your favorite 'must have" quick eats!

As a SAHM mom of a 7-month old and a 3-year old, I need to have quick foods on hand for meals, snacks, etc. to stay on the bandwagon. Sometimes I get in a rut eating the same thing or start resorting to processed food. Please post your favorite FLAVORFUL quick eats here....minimally processed preferred. Thanks! :)

    Houmous is dead easy to make from scratch - good for you, satisfying and you know exactly what's in it. I always have some in the fridge and have it on toast/crispbakes/raw veg depending on how I feel.

    1 tin chickpeas
    1 tablespoon tahini
    4 tablespoons of lemon juice
    1/2 tablespoon of the water from the tin
    1/2 tablespoon extra virgin olive oil
    1/2 tablespoon garlic puree

    This recipe makes 3 portions of around 150kcals.

    Whizz it up using a stick blender until it's smooth and lovely.

    (add extra garlic/lemon juice/coriander puree/some harissa if you fancy)

    trail mix from the bulk bin over at whole foods, and Annie's Organic Cheddar Bunny Crackers (50 crackers for 140 calories).

    Baby carrots. I usually have snack bags ready to go for a quick grabbing as I leave the house.
    Kernels 100 cal popcorn
    Sandwich and soup to go. Or cook a big batch and freeze in containers.

    My favorite late-afternoon snack is 2 lightly salted rice cakes, each with about a teaspoon of natural almond butter...very yummy, healthy and filling!
  • Whole wheat toast. You can keep it from getting boring by changing what you top it with-- low sugar jam, low fat cream cheese, peanut butter, whatever!

    Breakfast:

    quick oats, bananas, whole wheat toast, eggs

    Lunch/Dinner:

    Pre-cooked boneless skinless chicken breast with some frozen broccoli and whatever for flavoring

    Snacks: fruit, cottage cheese, greek yogurt, and raw almonds.

    I know it sounds really wierd but a tortilla shell (whole grain) with peanut butter and bananas. It has alot of protein in it and it keeps you full!!

    Hi! I'm a SAHM of 3 (6, 3, 1.5)

    We keep granola bars, string cheese, apples, special k bars, fiber 1 bars on hand at all times :)

    My kids could eat apples dipped in peanut butter 18 times a day haha.

    For breakfast I usually do oatmeal (the real stuff, no quick oats here ewie) with a touch (roughly half a tsp) of brown sugar and a splash of cinnamon.

    Sometimes I'll microwave their apples for 10 seconds with cinnamon (it's relatively low calorie, I think it's roughly 20 per Tablespoon but I never use more than a tsp or so...so like 7? calories)

    cup of blueberries, laughing cow cheese on whole wheat toast, peanut butter on whole wheat toast, sliced apple dipped in PB. I am also a SAHM AND I do home daycare feel free to add me for ideas:))

    15 special k cracker chips 55 cal, philly swirls ice cream bars 14 cal, morning star veggie patty on a sandwich thin 180 cal
    chocolate mini rice cakes 7 for 60 cal.
    these are really good snacks

    Almonds (esp the roasted sort- my favorite is the brown sugar and cinnamon. Not too sweet but yummy)
    Cheese
    Fruit (but only with protein- I get even hungrier otherwise)
    Hummus and carrot sticks
    Rolled up lunchmeat
    Avocado
    Hot dogs- I buy nitrate free, humanely raised ones and boil and dip in ketchup
    Luna Bars are great if you can tolerate that many carbs at once (I can't)

    I'm gluten/egg free, but if I could, I would also eat hardboiled eggs- they're hugely healthy and pretty portable

    I love cheese--it is satisfying to me in small amounts. Gordon Food Service sells several different kinds of cheese in cubes that are only 25-30 calories a piece. Havarti is my favorite. I'll eat a couple of cubes with an apple or a couple Triscuits or just by themselves.
