pre-Christmas work pot luck - what to make?

We are having a work Secret Santa and pot luck. Everyone at work is watching their waistlines (including me). Any suggestions as to what to make ? (something that can be reheated in the microwave without going mushy would be ideal).

    I made this last night and it was so good! Mushroom Pot Pie realsimple.com/food-recipes/browse-all-recipes/mushroom-potpie. My boyfriend wanted meat in it so I added a pound of ground pork- I imagine it will taste great just how it is on the website. I bought the extra thick filo dough in the freezer section and it came out looking rustic. Personally, I would add the mushrooms to the skillet (Step 1) after everything else is soft and cook for a good 5 minutes before adding stock- they will wither if they are in the heat for a full 15 minutes and then baked in the oven!

    Low calorie because it's all veggies and only has a couple sheets of dough on the top of the pie. It a comfort type of food, perfect for Christmas and cold weather.

    Potato Salad: http://allrecipes.com/recipe/87373/red-potato-salad/ I use half the sauce, which is more than enough to coat the salad, and I roast my potatoes instead of boiling them.

    All of the hot suggestions can be made and transported in a slow cooker, which just needs to be plugged in at the potluck.

    Made those last week. Not too bad calorie-wise (50 calories each if you make 24, although I made bigger ones at 110 calories because I'm not too good at stuffing cheese in mini meatballs) and really good (I replaced the evil celery by grated carrots). Easy to serve on toothpicks.

    Make salsa chicken in the crockpot (just chicken breasts and some salsa; google for an exact recipe for times/quantities - there are DOZENS if you search, just depends on your needs) and bring corn tortillas, pico de gallo or onions and cilantro, and maybe some (reduced fat if you wish) sour cream and cheese and/or avocado - chicken tacos!

    The last time dh had a work pot luck he took meatballs. They were pretty popular as most people had just brought a dessert.

    Deviled eggs
    Veggie tray or fruit tray
    Salads- vegetable, bean/lentil, or pasta
    Tortilla pinwheels

    I pretty much always make meatballs. The most popular over the last 5 or so years have been Asian Turkey Meatballs (I add 1T of honey to the dipping sauce), BBQ Cheddar Jalapeno Chicken Meatballs, and Buffalo Chicken Meatballs.

    yeah, but what kind of food suggestions? low cal? low fat? low carb? so many options


    I've always preferred making a breakfast dish, since we have to wait for lunch otherwise w/ all that food hanging around...we can get right to it!

    The dessert thing is so true. At our company Christmas potluck there are typically 2 tables of desserts! I never bring dessert because I don't want to bring 2/3'rds of it home.

    I make 7 layer salad, Napa cabbage/ramen noodle salad, or broccoli raisin salad.....something that people will recognize. I usually take home an empty pan.

    I like to stick to something simple if I'm in a rush. I'll stop by Costco and buy a fruit or veggie tray. If I have time to cook, I make a quinoa salad (meat or meatless - loaded with vegetables) which can be served warm or cold.
