Miracle Noodles Mac and Cheese

Miracle Noodle Mac and Cheese from web…

2 packages miracle noodles
16 oz cheese
1 cup Milk
1 large egg
1 stick of butter

Cut the noodles up to length.
Mix the noodles and cheese up in a 9 x 13 pan
Pour milk, egg, and melted butter mixture over all.

Bake for 45 minutes at 350F.

The above recipe, with its whole stick of butter was just excessive to me… along with being placed in a 9 x 13 pan just seemed wrong.

So I modified it to this:

Notably, putting it in a smaller pan… 9 x 6.5 that I could fit in a toaster oven, and adding a bread crumb topping. Substituting and reducing the total quantity of cheese produced a creamy reduced calorie version of the same recipe. I am a firm believer that a little Velvetta needs to be added to any mac and cheese for creaminess.. and it is lower in calories than regular cheese… a win-win. The bread crumb topping is composed of the melted margarine mixed with panko bread crumbs put on in the last 10 minutes of cooking. A nice sized square (1/4 of the pan) is only 250 calories, and for me, I thought ½ the pan was sufficient with some vegetables…

    How do you prepare the Miracle Noodles before you cook it? Do you put it in a pan and dry cook it first? I just got some and my husband tried to cook it and they still seemed kind of slimey......Thanks!

    You didn't mean 0 TBS of butter did you? If it's 100 cal wouldn't that be 1 tbsp?

    As for the miracle noodles, rinse them and rince them again. I pan cook mine first because they are too soft/slimey, but by cooking them over a gentle heat they firm up to where I love them.

    Use Laughing Cow wedges! The Garlic and Herb go well with Miracle Noodles!

    Miracle noodles are a noodle made of konjac root... similar to shirataki noodles that are made of tofu and konjac root. Miracle noodles have no calories, shirataki noodles have about 20 per serving. Cooking wise, I rinse rinse rinse, then let them boil briefly. Draining them and letting the dry out a bit in the hot pan. Then I use them as I would in any recipe using pasta or noodles. It is not an exact translation from traditional pasta but really close.

    Yes, I just wanted to show 0 TBS in my recipe. The Excel spreadsheet I used for adding up calories did not translate that well. The first number after the ingredient is the calories per unit, then the final count based on what was used is the final number...

    I originally ordered the miracle noodles and recently found the shirataki noodles at the local natural grocer. I think I like the shirataki better. I think the shirataki texture is closer to a noodle than the miracle noodles and the appearance is less translucent. Additionally with a local source the price is lower.
    Like I said these types of noodles are not a direct translation for flour based pasta but they hold their own in anything vaguely Asian.. sesame noodles, pad Thai, chow meins, misu soups....
