It's not a sweet muffin, but here's a recipe for a breakfast egg "muffin" deal.
Cheesy Egg Muffins
Original Recipe Found Here: (Thanks to @fivethreeone for the recommendation!)

If you want an idea of nutrition breakdown, here's what mine came out to when I first made them -
(Makes 12)
Ingredients:
307g All Whites Egg Whites or Egg Beaters Egg Whites
188g Egg Beaters Original
2 tbsp Silk Soy Milk Plain with DHA Omega-3
40g Sargento Shredded Reduced Fat Colby-Jack Cheese
65g White Mushrooms (raw), diced
70g Tomatoes, diced
51g Orange Bell Peppers, diced
Directions:
1. Preheat oven to 350 degrees F. Spray 12-cup muffin tin with nonstick cooking spray, you can also line with muffin tins, just make sure you spray the inside of the muffin tins.
2. Fill each muffin tin 1/4-1/3 full with veggies and herbs of choice. Add cheese to each muffin tin.
3. In medium bowl whisk together egg whites, eggs, and milk/yogurt. Fill each muffin to the top with egg mixture, pouring over the veggies already in each tin. Bake for 20-30 minutes or until risen and slightly golden on top.
4. Let cool for a few minutes, then remove from tin.

Oh, I see. If interested, I normally order mine and two brands I'd recommend are Optimum Nutrition and Trutein.
ON is pretty well priced but I've found baking with it does require a little extra butter or it ends up coming out a bit dry. Trutein is pricier, but I love it as a shake and with baking. The same muffins and such I've made with ON come out really moist with Trutein.0 -

These sound good...might try to reduce some of the whole eggs for egg whites for a lower fat version!0 -
just made some tonight for work, 5 servings in a muffing baking dish:
90g all purpose flour = 300 calories
57grams vanilla whey isolate = 210 calories
138 grams egg whites = 75 calories
60 grams canned pumpkin = 50 calories
a little cashew milk to get thickness right, its the 25 calorie per 8 oz kind so you may use a calorie or two...
zero calories granulated sweetener( sugar replacement for baking)
cinnamon
butter extract
baking powder
bake at 350 for 25 minutes
totals per muffin: 123 calories, 14 grams protein, 16 grams carbs, 0.3 grams fat0 -
