I have a lot of similar snacks as those previously stated, but here is one of my favorite sweet treats.
Gramwiches - Graham crackers with 2 tbl Fat Free cool whip spread in between and freeze them. Very much like ice cream sandwiches but much healthier.

They are very delicious and not too rich. I have not tried it but have been advised to try the chocolate graham crackers or even a little reduced fat/fat free peanut butter with the cool whip.
