I work full time (and then add a part time job on top of that) so i rely on my crock pot for a lot of dinners. I am looking for some low cal crock pot ideas. i have a really good pineapple chicken one, but need some more. My family isn't picky. But i would prefer ones that don't have a bunch of bizarre ingredients - mainly because I live in a rural part of Manitoba Canada.

A jar of salsa, 1.5 lbs of chicken, frozen corn, and a can of black beans (drained). Cook on low for 8 hours, shred the chicken, and add some cheese on top. We serve it over rice or we eat it with tortilla chips (usually one night of each because this is 2 meals). I have a recipe that calls for a lot of other seasoning, but it really isn't even necessary with a salsa you like.0

I love this buffalo chicken recipe. It's so easy, only 4 ingredients and tastes amazing over salad or on a bun. I make it once every couple of weeks.

I make Greek Lemon Chicken by putting chicken some potatoes, onions, carrots, olive oil, spinach, garlic, herbs and lemon juice squeezed over all of it. I slice some lemon in as well. from weight watchers I think but put in some vegetables like carrots and spinach to make it healthier and tastier.0 -

I have buffalo chicken chili in the crock pot today (a package of chicken thigh filets, a can of white beans, can of red beans, a 15 oz can of tomato sauce, 1/2 cup of buffalo wing sauce, shredded carrots, diced onion, chicken broth as needed to give it enough liquid, and cumin and chili powder to taste).

I did a chili the other night (though I am thinking this is probably the most basic of all slow cooker recipes and you have a chili already):
523 g extra lean ground beef (I pre-cooked it)
150 g chopped onion (one onion - I cooked it in the beef but sometimes I don't)
540 ml can drained and rinsed chickpeas (used Blue Menu PC brand)
540 ml can drained and rinsed red kidney beans (used no-name brand)
798 ml canned diced tomatoes with herbs with juice (I think Unico or No Name)
3 Tbsp tex mex spice (could use some other amount of chili)
1 tsp of garlic powder
6 servings at roughly 350 cals each. I cooked overnight on low for 7-8 hours but the recipe called for 9-10 hours (it also called for cubed stewing beef but I like ground better).
If I remember any more of the longer recipes I will put them here! Like the Chicken Satay stew (Company's Coming). Think chicken, tomato paste and salsa, mushrooms (or whatever veg you want) and peanut butter. Served on rice usually.
Oh yeah I took a photo of it!
680 g chicken breast cut into cubes
3 cups quartered white mushrooms
1.5 cups spicy salsa
2 tbsp tomato paste
0.5 cup water
0.5 cup crunchy peanut butter.
Recipe says to brown the chicken first. I always just dump it in raw - too lazy for that haha.
It also says to brown the mushrooms... I just dump them in raw.
Combine everything except the peanut butter in the slowcooker and cook on low for 6-7 hours. Mix in peanut butter before eating. Serve on rice!
Bet you could add chickpeas or lentils to that if you wanted to. I've added carrots before. Was good!
Try looking at www.skinnytaste.com - she has lots of slow cooker recipes. I adore the chicken cacciatore one. I always shred the chicken after it's done and put it back in. And I add zucchini. Really nice flavour in there.
I LOVE the Company's Coming 5 Ingredient Slow Cooker recipe book, if you can get your hands on it (the book should be between $10-$15)... and I live in Manitoba too so I know those books are around (not sure if they're in Warren, but if you come to Winnipeg they're in every Superstore. Maybe you can get it online too). Company's Coming also has a Healthy Slow Cooker book but it has lots of ingredients that I don't keep on hand. The only thing I find difficult to find in my 5-Ingredient book are recipes for over 8 hours on low. So I sometimes do a short recipe on high while cooking other food, or I do it for 7-8 hours over night (because I have a bad habit of not sleeping enough). If you cook overnight... close your bedroom door! The smell makes me wake up in the middle of the night hungry hahaha.0 -

I don't eat meat but my kids do. Today, I dumped in a bag of chick thighs, ital dressing, lemon and onions in my slow cooker. Kids LOVED it. Sliced up the rest and made chick noodle soup (w lots of veggies). Easy.0

Cook books are frequently featuring crock pot recipes because of the current interest from readers and home-cooks. I recently bought Nigella Lawson's new book 'Simply Nigella', and she had a surprising number of slow-cooking recipes, some of which looked absolutely delicious. I expect you'd be able to find some of those recipes online - or very similar ones (just click on the link and scroll down to 'slow-cook', and you'll see her recipes).
Lastly, it might be worth looking on Amazon for slow-cooker recipes that are available on Kindle. That way you can buy them and keep them on your phone, laptop, Kindle, etc., and have them at hand when you're cooking if you don't want to have to buy a physical book.

I do fajita chicken in mine. layers sliced onions and sliced peppers (I use red, orange and yellow peppers) on the bottom of the crockpot. Lay 3-4 boneless chicken breasts on top and then take a packet of fajita flavoring and sprinkle it over the chicken. I cook it on low for 6-8 hours. I then take the chicken out, shred it and mix it back in with the other ingredients. Then serve it in wraps with low fat cheese and any other fixings you like.0

I roast a whole chicken. I mix a tsp basil, rosemary, thyme, parsley, tbsp olive oil, juice from one lemon and salt and pepper to taste. I put it on the chicken and cook on low all day.
I also cook a pork tenderloin in water all day. Remove shred and add bbq sauce.
And last night i cooked a pot roast. I put pepper and garlic powder on the roast and seared it in a pan. I put it in the crock pot with a couple of bay leaves and covered in water and cook all day on low.
Today I'm cooking a spaghetti squash in two cups of water.0 -
Here you go. A very good recipe for ground turkey bolognese in the slow cooker. I love how you do not have to ground the meat. It was delicious, even my picky kids liked it!!

I make chili regularly in the winter. 2 lbs ground turkey (pre-cooked), 2 cans kidney beans (rinsed and drained, each 15 oz each), 2 cans diced tomatoes (no sugar added), 2 cans tomato sauce (not the pasta kind, no sugar/salt added), 1/3 cup chili powder, 1/4 cup cumin, a diced onion (or minced onions, which we prefer), a couple teaspoons of fresh minced garlic, a tiny bit of sea salt and pepper, and put it on high for 4 hours or low for 6-7 hours. It's about 400 calories per (large) serving.0

Chicken breasts and cream of mushroom soup. I do about 4/5 pieces of chicken and 2 cans of soup. Cook for a few hours and serve over quinoa! Delicious!0

I've got some Chinese style chicken in mine right now. 6 skinless chicken thighs, 2 onions sliced, 2 green peppers chunked, 3 cloves garlic, chunk of ginger chopped, 4 med carrots sliced, 1 stick celery sliced, 2tbsp hoisin, 3tbsp dark soy, 3 tbsp rice wine and 2 star anise. Lots of black pepper and season with salt when done. Serve over brown rice.0

I would be too embarrassed to call this a recipe but here is a family favourite - take as much round steak as you need to feed your crew, put it in the crockpot (no need to brown). Mix 1 can cream of mushroom ( or broccoli or asparagus or whatever cream of!) and 1 packet of dry onion soup mix, then pour that over the top of the steak. This is a really forgiving recipe, as I have cooked it for about 8-9 hours on low, and once got caught working late and it went for almost 12 hours! The steak comes out very tender and the two soups create a wonderful gravy that you can use over rice or potatoes or cauliflower or green beans etc. You can just skip the gravy for your portion and serve to others. Try to find a low sodium soup, as it can taste quite salty and if you are watching your sodium intake this might be problematic.0

I forgot to say that you can add carrots and/or potatoes, or squash or any firm, winter root type veg with the steak and it will cook just fine at the same time.0
