Late home from work dinners

Hi all I'm looking for easy to throw on healthy low carb high protein dinners. Perhaps good slow cooker recipes?
I'm out the door at 7am and I don't get in until 7.45pm on a gym night or 6.30pm on normal days

There is also the option to precook food in batches earlier in the week. I like to grill several pounds of chicken on the weekend so it can be reheated and used in other meals or eaten on its own for lunch or on nights I get home late from work.0

This is what I do. I am out of the house, between commuting to/from work and work itself, for fourteen hours a day, so I take one of my days off, and cook several days worth of food. Depending on what I cook, I freeze it or leave it in the fridge in portions and just grab it and go.
If you want it for an evening meal, put it in the fridge (if frozen) before you leave for work. It likely won't completely thaw, but will be much better than frozen solid.
I used to do like the above and cook several pounds of a meat, but now I do two smaller batches. While I enjoyed the convenience at first, the same thing every day got kind of blah. The grains and veggies however I do the same every day, that's no big deal to me.0 -
I have several days of the week that I work late as well. I have found prepping meals ahead of time like on a Sunday to be really helpful. In a pinch however, I will microwave a bag of frozen broccoli then use half and top with a pouch of tuna and some salsa. I also rely on eggs and sauteed veggies for a quick option.0

Doesn't it dry out? That's my biggest issue with batch cooking, especially (grilled) chicken breasts.0 -
we grill lots of shrimp, lean ground beef and turkey to have around. We will do tacos, salads, etc. with them a lot.0

A cobb salad is an excellent high protein meal and can be made mostly in advance. On nights that I am short on time, I grill salmon, make fish tacos or a quick Thai curry (saute vegetables and choice of protein and mix with a can of coconut milk and some curry paste). We also do omelets a lot. It always helps to have your vegetables prepped in advance.0
