How do you keep turkey burgers from getting dry?

I make a greek turkey burger - extra lean turkey breast, finely chopped spinach, montreal steak spice, light fetta cheese, make patty's and cook in a skillet. You can add an egg if it's not forming well - I've never had to and... have never had a problem with them being dry! Oh ya and serve on a low fat bun with tzatziki, red onion, and tomato:D
do you make your own tzatziki??? i love it, but can't make mine taste like the restaurant!0 -
My 22 year old son, the self appointed chef in the family when he is home from school, makes WONDERFUL turkey burgers. His secret is adding about a 1/2 cup of oatmeal and quite a bit of barbeque sauce. Juicy and delicious; never dry.0

I add a bit of olive oil, one egg, onions, parsley and either Worcestershire sauce or soy sauce. Horseradish is good, too.0

While grilling, brush on a terriyaki marinade a few times and top with a slice of grilled pineapple:)0

Deep fry them, the oil will keep them moist. JK
Try using a 95/5 or 90/10. you need fat in the burger to keep it from drying out.
Agreed, you need a bit of fat in the meat to keep the burgers from drying out and also dont over work the meat when mixing it, that can make it tough.0 -
I use egg beaters, chopped onion, green pepper, green chiles and worcestershire sauce. Spray skillet or grill with pam and cook burgers on medium until internal temp reaches 180 degrees. I also add a little more worchestershire sauce while they are cooking and they come out really juicy..........yummy.0

Years ago someone made me a meatloaf made out of onions and carrots. I'm wondering if grated carrots might work, also.0

Thanks to this thread I was inspired to make some tonight. They were extremely moist. Easy and lo cal. I used 93/7 ground turkey, shredded onion and carrots (the smallest on the grater), lite salt and pepper. My husband grilled them. Unbelievable. My husband is not one for "diet food" but he loved this one.0

Just tried making lowfat turkey burgers for the first time. I added mashed avocado, chopped onion, bbq sauce, Mrs. Dash and egg white to 99% fat free ground turkey breast before cooking. Seemed to work, but next time I'll use less avocado in the meat, and put some sliced avocado on top. You can't really taste it when it's cooked in the meat. Also I'd use more seasoning - it was tasty, but bland.0

I always make my own burgers. With turkey, I use a whole egg per pound of mince, a small finely chopped onion and a dash of lemon juice (plus fresh thyme for flavour). I've never had them come out dry.
Mind you, there's some other fantastic ideas here - will have to try the avocado and barbeque sauce one!0 -
My first thought would be to add some flour to the turkey and cook it in a pan with some wine and spices. Or as someone else mentioned egg white mixed in would help.0

I don't know about burgers, but I make very moist turkey breast meat loaf. I add a can of asparagus (chopped or blended and cook the moisture out). I also add a sautéed onion, egg, and rubbed sage. Sounds crazy, but it is really good. Cover it and cook at 350 til done. We eat it like a burger, or have a big slice over spagetti squash with marinara.0
