If I've been eating 1200 cals for a couple of months will I gain if I up it a bit being that I don't have much more to lose and want to maintain where I am?

You will only gain weight if you eat over your maintenance calories. 1200 is your daily goal at a deficit, if you want to know your maintenance calories change your rate of loss to 0 rather than -1lb or -2lb (or whatever your goal currently is), and as long as you eat under that amount you'll still lose.

Just as an example, I'm 5"7, 160lbs, sedentary and my maintenance is 1900 cals ish. If I eat less than 1900 I'll lose weight, if I aim for 1900 a day I'll maintain, and if I eat more than 1900 I'll gain weight.

It may seem like you've gained weight initially if you up your calorie intake slightly, but it will likely just be water weight as long as you stick to/under maintenance calories.

Also, if you do up your calories do so slowly for the best results :-)

yup, if you're close enough you could probably start now. Just add 50-100cal more for the first week and continue to do so until you see weight stablize.
